Lasagna Soup-Meatless Monday

Welcome to the first Meatless Monday of 2015! It’s been so great connecting with you all and discovering so many great meatless recipes. This month, our focus is soups, stews and chili. That’s just a suggestion of course. Feel free to link up any meatless creation you’d like to share. Tina and I can’t wait to see what yumminess you will have this month.

This Lasagna Soup has all the yummy goodness of lasagna in an easy and filling soup sure to please even the meat eaters in your house. I’ve used “Beyond Meat” soy crumbles (you can use any brand) to add some protein. In my opinion they look just like ground beef in any recipe. This has become a family favorite with my kids. Hope you enjoy!

Lasagna Soup~Meatless Monday
Recipe Type: Soup

Prep time: 20 mins
Cook time: 30 mins
Total time: 50 mins
Serves: 6
All the goodness of Lasagna in a healthy, hearty soup.
Ingredients
  • 1 onion-diced
  • 2 C Beyond Meat Veggie crumbles
  • 1-2 garlic cloves crushed
  • 4 C Vegetable stock
  • 1 28 oz. Can of diced tomatoes lightly pureed
  • 2 Tbl Tomato paste
  • 1 red or yellow pepper diced
  • 1 tbl oregano & basil
  • 1 tsp thyme
  • 1 tsp fennel seed, crushed
  • salt & pepper to taste
  • 8-10 lasagna noodles-broken into small pieces
  • 8 oz light Ricotta cheese
  • 1 C light mozzarella cheese
  • 2 oz Parmesean cheese
Instructions
  1. In a large soup pot-saute onion, peppers and garlic
  2. At the same time-cook broken lasagna noodles until al dente-reserving 1 cup of pasta water-set aside
  3. Add to stock pot:
  4. vegetable broth, tomatoes, veggie crumbles, paste, spices
  5. Bring to a boil, reduce heat add noodles and simmer at lease 20 min
  6. salt and pepper to taste
  7. Add in 1 C of reserved water if needed to reach desired consistency
  8. Combine the 3 cheeses in a small bowl
  9. Ladle soup into bowl and garnish with 1-2 Tbl of cheese mixture

    I LOVE Lasagna – I had it twice over Christmas break. So I would love it in other forms too! I am going to try this out 🙂

    My favorite soup is Chili, but only my moms. If we are talking generally it would be French Onion or Cream of Mushroom.

      Well maybe you can snag one of those recipes from your mom and link it up. I love cream of mushroom too. This soup is great-lighter than traditional lasagna but still yummy.

    WE are big soup eaters here. I have never tried the soy crumbles before. My hubby would want to use venison in this recipe for sure. Happy Monday!

      Well if we don’t tell anyone I guess you could use meat. Would be fun to do a test and see if he noticed you used soy.

    Yum… I love lasagna but would have never thought of combining the flavors into a soup. My favorite soup is probably a corn chowder. We’re experimenting with a vegetable chowder tonight so I might be doing a post about it later this month if it works out well.

    This looks delicious! I have not tried cooking with soy crumbles but I used to buy a morningstar farms lasagna that had soy sausage in it and it was delicious!

      Oh it’s way better to make your own! They are really easy to cook with because you can throw them in frozen. I use them for everything.

    This sounds delicious, I bet my oldest would love it! I love Beyond Meat! My oldest likes it better than meat, my youngest isn’t a fan of meat in general so she doesn’t like either but will eat some dishes with Beyond Meat. My husband well he likes his meat and isn’t a fan of the Chicken Free Chicken but will eat the beef crumbles.

      Confession: my husband is a total carnivore! It makes for interesting meals around here. It’s so easy to cook with the soy crumbles-I love them.

    Deconstructed lasagna! What a great idea! Saves you from all the time spent layering. I tried Beyond Meat once and thought it was really good. Yum yum!

    I have tried lasagna before w the fake meat and I thought it was very chewy. Maybe it was just the brand I got. May have to try the one you suggested.

      There are many different brands. Beyond meat is probably my favorite for taste and texture. Morningstar is my second choice. Give it try!

    I tried Beyond Meat at the IDEA Fitness convention and loved it so much that I now have about 6 bags in my freezer. This recipe looks great.

    Sounds delicious! A thrifty option in place of ground beef is garbanzo beans (chickpeas); just semi-mash them with a potato masher and pull out any big pieces of skin. They are great in this pasta sauce.

    This sounds really good. I’m not a fan of “fake” meats, so I might try the garbanzo bean suggestion above or maybe navy beans (or some sort to actual meat, shhh.)

    I love this twist on lasagna. How did you like the fennel in the soup? I haven’t tried soy crumbles, what do you like about them?

      The fennel was great. In this small amount it didn’t really seem too noticeable. I like the soy crumbles bc they add a ton of protein and give a heartier feel to the soup. I’ve been a vegetarian my whole life so I can’t attest to how “meatlike” they are but my family likes them and they eat meat.

    I’m vegetarian but I dont cook with soy because .. well ..because it is soy. Also, I never grew up using it and so I try to stay away.
