Kicked Up Corn Chowder~Meatless Monday

If it’s been as cold where you live as it is here, you will love this hearty, healthy Corn Chowder. I’ve been focusing on soups this month and this one is one of my family’s favorites. It’s super easy to make and is sure to be a hit with your family too. I’ve kicked it up a bit with some jalapeno peppers but if you don’t like spicy, just omit them.

Kicked Up Corn Chowder~Meatless Monday
Recipe Type: Soup
Author: Confessions of A Mother Runner
Prep time: 15 mins
Cook time: 1 hour
Total time: 1 hour 15 mins
Serves: 6-8
Hearty, healthy kicked up version of corn chowder
Ingredients
  • 2 Large ripe tomatoes-halved
  • 2 Bell or red peppers-halved
  • 3 Cups Frozen corn
  • 1/2 onion chopped
  • 2 garlic cloves-chopped
  • 3 Cups of Vegetable stock
  • 1-2 jalapeno peppers-seeded and chopped (depending on your spice preference)
  • 1/2 C of light cream
  • Chili powder, salt & pepper to taste
  • Avocado & sunflower seeds for garnish
Instructions
  1. Preheat oven to 375 and roast tomatoes and Bell/Red Peppers until softened approx 10 M
  2. In a stock pot combine:
  3. Roasted Veggies, corn, onions, garlic, Veg stock, jalapenos and spices
  4. Bring to a boil, reduce heat and simmer for at least 1 hour
  5. Use an immersion blender or transfer to blender to puree all ingredients
  6. Add more Chili pepper if needed
  7. Right before serving mix in light cream to combine
  8. Serve with avocado and sunflower seed garnish

    I love corn chowder, but corn is on the list of things my husband just won’t eat – unless it’s corn on the cob for some reason!

      Oh my family doesn’t eat half of the things I make. You might have to make it for yourself and bring it to lunch.

    Soups and stews have been the name of the game here. We’ve been in the deep freeze for a couple of weeks and need some heat in our bodies to keep us going!

    This sounds really good – I might have to try it with chipotle peppers. (I can’t make any recipe exactly as given. I can’t resist tweaking LOL)

      I’ve used habanero peppers but thought they were too spicy for the blog. The spicier the better for me. I cook with Chipotle in adobo a ton so good. Any of them would work.
