With soup season in full swing, it is the perfect time to share one of my new favorites. This Impossibly Good Creamy Cauliflower and Kale Soup 🍲 is made with, you guessed it, impossible sausages. I added these to bump up the protein and create a more complete meal. Ready for the tasty 😋 deets?
Impossibly Good Creamy Cauliflower and Kale 🥬 Soup 🍲
This is a relatively easy recipe with not too many ingredients. Perfect to simmer up on a cold day and enjoy all week. (If you have any left!)
What are the main ingredients?
Roasted Cauliflower
Vegetable (or chicken stock)-I like low sodium
Fresh Kale (about 5 cups)
4 Impossible Sausages (or similar brand)
1 small onion + 2 garlic cloves
1 C of cream or half and half
Roasting the cauliflower first really brings out the flavor and is an important step in the soup.
Protein substitutes
No worries if you are not into vegan proteins. You can easily sub out the impossible burger sausages for chicken or port sausages. Rotisserie chicken would also work well. Additionally, ground turkey or beef could be subbed.
Other substitutes
Don’t like kale? Fresh (not frozen) spinach works. The half and half or cream can be replaces with a can of coconut milk and will not alter the taste.
How do I make this Impossibly Good Creamy
Cauliflower and Kale Soup
First, preheat your oven to 400 degrees and roast your cauliflower for about 20 minutes until soft. Coat it with some olive oil, salt and pepper before roasting.
Meanwhile, in a large stock pot, sauté your impossible burger sausages (or meat of choice) until browned. Remove from pot and set aside. Sauté your onions & garlic and pour in your stock. Add in the roasted cauliflower and bring to a bowl. Reduce to a simmer for 15 min.
Using an immersion blender or traditional blender purée the soup until smooth. Add back into the stock pot with your sausages. Fold in your kale. Slowly, mix in your cream. Season with salt, pepper and garlic.

Impossibly Good Creamy Cauliflower and Kale 🍜 soup
Hearty and healthy Creamy Cauliflower and Kale soup made with Impossible Burger Sausage for a higher protein vegetarian soup option
Ingredients
- 2 heads of cauliflower-washed and chopped
- 4-6 C fresh kale chopped
- 8 C low sodium vegetable broth
- 1 onion + 2 garlic cloves
- 1 C half/half or light cream
- 4 Impossible Burger Sausages (or equivalent. Replacement)
- Olive oil, salt and pepper
Instructions
- preheat oven tto 400 degrees
- Arrange chopped cauliflower on sheet pan, drizzle w EVOO, salt & pepper
- Bake for 20 min
- Meanwhile, in large stockpot sauté impossible sausages until brown and set aside
- Sauté onion and garlic, add in stock
- Add in the cooked cauliflower and bring to boil then simmer for 15 m
- Purée soup ingredients w immersion or regular blender, return to pot
- Stir in kale, sausage and cream
- Enjoy
Notes
Can substitute the impossible sausages for any other protein source

I love soup, but never make it. I once had a horrible experience making broccoli cheese soup and had to throw the entire pot out and my husband had a similar experience with turkey soup. Sadly, I’m so traumatized by the two experiences that I’m afraid to try it again. LOL
