I am always on the search for ways to make traditional menu items healthier and also vegetarian. With so many soy based products on the market now, this is easier than ever. This Caesar salad recipe has been in my family for years and it really cuts out some of the fat and calories that you normally find in traditional recipes.
You will need:
- 1 tin of anchovies
- 3 garlic cloves
- ½ cup olive oil
- 2 egg whites
- juice of ½ lemon
- 1 tsp. Worcestershire sauce
- Pepper
- Parmagiano cheese
- Large cut croutons
In a Cuisinart or blender:
- Puree anchovies and garlic cloves. Slowly add in olive oil then egg whites until fluffy. Add in lemon juice, Worcestershire and Pepper to taste. Dressing will be white and frothy. I like to refrigerate it for at least 30 min before tossing so the flavors really mesh together.
- Prepare the lettuce-I like to use a combination of Romaine and Kale to amp up the vitamins but you can use whatever type you prefer.
- Toss dressing with lettuce and mix in Parmagiano and croutons to suit your taste.
To add a little more veggie protein to this recipe I found “Beyond Meat” Chicken Free Strips. They are also Gluten-free and offer 20 grams of protein per serving for 120 calories and only 3 grams of fat. They are one of the best soy-based products I have ever tried.
