    • Happy  Monday! Wow these weeks seem to be flying by for me-how about you? You may know from some of my previous posts how much I love hummus, Harissa and Mediterranean foods. I also love Falafel but the traditional preparation is not so healthy. I saw something on Food Network last week about Falafel made into waffles. What?! I had to try it. I kind of just made up this recipe based on my traditional falafel recipe and it was AMAZING!

    • Not only is this Fa Waffle fabulous tasting, it is fabulously healthy. High protein, low fat, vegetarian, gluten free-you can’t go wrong. Traditionally served with pita, this version doesn’t really need the bread. I topped it with a fresh tomato, cucumber & feta salad, hummus and a Tahini Harissa sauce. Sometimes this salad is called Israeli salad, Lebanese salad or Greek salad-I am going with Peace Salad. My meat loving husband even leaned over and asked me for a bite! That’s got to count for something. Hope you give it a try. It was delish!

Not only is this Fa Waffle fabulous tasting, it is fabulously healthy. High protein, low fat, vegetarian, gluten free-you can’t go wrong. Traditionally served with pita, this version doesn’t really need the bread. I topped it with a fresh tomato, cucumber & feta salad, hummus and a Tahini Harissa sauce. Fa-Waffles! Meatless Monday
Recipe Type: Mediterranean lunch or dinner
Author: Confessions of A Mother Runner
Prep time: 10 mins
Cook time: 5 mins
Total time: 15 mins
Serves: 3-4
Take the traditional goodness of a falafel and make it into a waffle.
Ingredients
  • Fa-Waffles-
  • 2 15 oz cans of chick peas-rinsed and drained
  • handful of fresh cilantro and parsley
  • 1-2 garlic cloves
  • 1/2 green or red pepper
  • 1 egg
  • juice of 1/2 lemon
  • 1 tsp baking powder
  • 1-2 tbl of flour of your choice to bind
  • 1 tsp cumin & coriander
  • pepper to taste
  • Tahini Harissa sauce
  • 1/4 c Tahini
  • 1/4 cup warm water
  • juice from 1/2 lemon
  • 2 tsp Harissa
  • -Stir to combine
Instructions
  1. For falafel:
  2. add cilantro, parsley and garlic into food processor and pulse
  3. add remaining ingredients (except for egg and flour) into food processor and pulse until combined
  4. Mix in egg and flour of choice
  5. Heat waffle maker per instructions
  6. Spray with non stick spray or coat w oil of your choice
  7. Divide batter into 3 portions and add 1 at a time into waffle maker
  8. Top with Tahini sauce and peace salad

    Yum! This sounds so good. I’ve been wanting to get a waffle maker. I actually love waffles. My iron died a few years ago and I never replaced it.

    Such a great idea! One day, I will have a waffle maker again. Until then, it will have to be pancakes with chickpea flour 😀

      You could make these with chickpea flour as well. I never use my waffle iron and I have no idea why I did but it was so good.

    HOLY YES I want these right now! Like I need a new reason to use my waffle iron. I’m trying these out ASAP! I’m on a big Tahini kick so these are perfect for me!

    This sounds delicious! I saw something similar on a food network commercial but I’ve never tried anything other than traditional waffles in my waffle iron. I definitely want to give this a try at some point.

    Oh, that sounds delish! I think my family might actually eat this one! They do like falafel. I’ve made brownies in the waffle iron. Topped them with strawberries and whipped cream. That was a hit!

    Genius idea. Falafel Waffels! We eat falafel often in our no-meat-athlete household. We often refer to them as “crunch patties”, after an episode of The Simpsons where Lisa opens a falafel stand 😉

    Yum falafel was one of the first vegetarian foods that my dad introduced me to! I was instantly in heaven and would beg that we hit up the falafel shop anytime I was in Philly visiting him. Fast forward a few years – and the fried version really doesn’t make me as excited anymore – but the waffles – you can make me two! No seriously, I don’t have a waffle iron and really want one!! Thanks for sharing!

    I’m more of a traditional waffle kind of girl but at the same time think that these would be a great fun idea my family might like and a great way to get in protein with waffles! I also have a bunch of chickpeas from when I was going through a BIG hummus phase that I need to use up!

    I love Waffles, they are just wonderful. I have tried some different ones, like carrot waffles but I have never tried anything like this. Gonna have to save this one to try sometime, this could be a great dinner waffle!

    This does sound tasty! I like making non traditional waffles. Rachel Ray had a waffle week on the show one time and I loved trying many different types of waffles. So good!

    I’ve never made falafels but these in waffle form sound and look good especially with that peace salad!!! I think my waffle maker is one of my most under utilized kitchen appliances!!
