Thanks for joining Sarah and me for Meatless Monday today. Ever feel like could use a little extra pep in your step in the morning or mid afternoon? Yeah me too! Enter these espresso oatmeal blueberry bites that will rock your world. They are filled with good for you yumminess in the form of oatmeal, blueberry and almonds. Oh and did I mention, no added sugar.
I got the inspiration for these from a recipe I saw in last month’s Runner’s World but I think my version is way tastier. 🙂 These are naturally gluten free (using gluten free oatmeal) as they have no flour at all. These espresso oatmeal blueberry bites are not a muffin but more of an oatmeal bake on the go.
I’ve added instant espresso to give you just a little extra spring in your step and then loaded them up with healthy goodness. You will love this combination of blueberry, oatmeal, and almonds as a breakfast on the go or a post workout snack. They can be eaten room temperature or warmed.
I opted to make them in this silicone muffin tin but you could also prepare them in ramekins are any individual dishes. (affiliate link)
I wish you could smell how amazing the cinnamon and oatmeal smelled as it filled my kitchen. I use no added white sugar as these amazing snacks are sweetened with honey and apple sauce only which also keeps them moist.

Wow! These sound really good. I assume you could use regular oatmeal in place of the gluten free?
I tinker with those Runner’s World recipes too. I’ve tried a few of them and they are all a little lacking. Isn’t that weird?

Oh yes, what a great way to start the day, and week for that matter! Can’t wait to try these! I use to make mini bites for the girls with just oats, bananas, blueberries, and almond milk and add things into mine. I think I might do the same with these, not that the girls don’t like coffee, but I can do 3/4 of them and then just add in the espresso to the rest of the batter for mine.

Wow, I think you could sell those blueberry bites. Every blogger talks about steel cut oatmeal, but I still use the regular variety in cooking. I guess I need to get with it and buy some of that instead. This weekend I was busy making a coffeecake for a fundraiser for the homeless shelter in town and cookies for my book group Monday night. Neither item is healthy but cheating now and then should be allowed!
