Thanks for joining Sarah and me for Meatless Monday today. Ever feel like could use a little extra pep in your step in the morning or mid afternoon? Yeah me too! Enter these espresso oatmeal blueberry bites that will rock your world. They are filled with good for you yumminess in the form of oatmeal, blueberry and almonds. Oh and did I mention, no added sugar.
I got the inspiration for these from a recipe I saw in last month’s Runner’s World but I think my version is way tastier. 🙂 These are naturally gluten free (using gluten free oatmeal) as they have no flour at all. These espresso oatmeal blueberry bites are not a muffin but more of an oatmeal bake on the go.
I’ve added instant espresso to give you just a little extra spring in your step and then loaded them up with healthy goodness. You will love this combination of blueberry, oatmeal, and almonds as a breakfast on the go or a post workout snack. They can be eaten room temperature or warmed.
I opted to make them in this silicone muffin tin but you could also prepare them in ramekins are any individual dishes. (affiliate link)
I wish you could smell how amazing the cinnamon and oatmeal smelled as it filled my kitchen. I use no added white sugar as these amazing snacks are sweetened with honey and apple sauce only which also keeps them moist.

Looking forward to seeing what you all come up with this week! Thanks for joining us today.
I am not the hugest fan of traditionally prepared oatmeal but these are a game changer. Tell me what are you snacking on these days? Oatmeal yes or no?
Love the combo of espresso with blueberries! Bold and sweet all at the same time!
Yes exactly!
These look great Deborah! Love that they don’t contain any flour.
Thanks hope you give them a try
Oh man this is like my breakfast come true! Love blueberries and espresso!
Thanks hope you enjoy them
Wow! These sound really good. I assume you could use regular oatmeal in place of the gluten free?
I tinker with those Runner’s World recipes too. I’ve tried a few of them and they are all a little lacking. Isn’t that weird?
Yes I think so too! And yes you can use any oatmeal just wanted to offer that as an option. thanks!
Ohhh these look delicious! And blueberries are so fresh right now! I need to make these.
Thanks! Yes I have a new love for blueberries lately
These look amazing, Deborah! I love the addition of espresso. I can’t wait to make these!
Oh great I hope you enjoy them thanks
Dear Deborah, These little muffins look so good! I could go for one this morning…a great snack too! xo, Catherine
Thanks so much! Hope you give them a try
Interesting idea of mixing espresso and blueberry! But I guess you eat blueberry muffins and coffee together, so why not!
That was my thinking exactly!
Yum!!! These look delicious! I’ve been loving blueberry lately 🙂 Happy Meatless Monday!!!
I am loving blueberries this spring as well
Those look amazing! I will definitely add this to my recipe list of things to try!
Thanks so much hope you enjoy them
These look fabulous! I am going to make them this week, Yum!!!
Thanks so much!
Oh yes, what a great way to start the day, and week for that matter! Can’t wait to try these! I use to make mini bites for the girls with just oats, bananas, blueberries, and almond milk and add things into mine. I think I might do the same with these, not that the girls don’t like coffee, but I can do 3/4 of them and then just add in the espresso to the rest of the batter for mine.
Happy Meatless Monday!
That should work! Let me know how it goes. Happy Meatless Monday
These look delicious! My issue with bite sized snacks is that I don’t often have the willpower to stop after eating just a couple. I think “Well, they’re small so I can have some more, right?”
Ha ha I called them bites but they are muffin size and rather dense and filling
Those sound incredibly good!!!! I’ve been on a huge oatmeal kick lately and would love to try those!
Thanks so much hope you enjoy!
These sound so perfect! I can’t wait to try them. Thanks for the link up!
Thanks hope you enjoy!
These look amazing! I thought it was a muffin, but either way it’s all good to me! Looks like the perfect meal to start the day – I’ve never added espresso to food but I bet it does the trick!
It’s a fun addition and pairs well with the blueberry
How have I never put coffee in my baked oatmeal muffins before?! This is brilliant. Can’t wait to try it out. 🙂
I know! You will love them
Wow, I think you could sell those blueberry bites. Every blogger talks about steel cut oatmeal, but I still use the regular variety in cooking. I guess I need to get with it and buy some of that instead. This weekend I was busy making a coffeecake for a fundraiser for the homeless shelter in town and cookies for my book group Monday night. Neither item is healthy but cheating now and then should be allowed!
Absolutely! I agree and thanks 🙂
I am loving that you added espresso to these beauties…can’t wait to try and thanks for hosting another fabulous meatless monday link up!
Thanks hope you enjoy
And I bet they smell wonderful too!
Oh they really do!
These sound so amazing! I love the idea of using espresso! It will give it the perfect kick! Thank you so much for sharing!

Thanks! They were delicious too
This looks like the perfect get up and go fuel! Quick, easy, portable and with a caffeine kick too! 😉
Exactly!
I am definitely trying these!! Hopefully tomorrow. I have been trying to think of a healthy snack to take to work and eat that won’t leave a heavy feeling in my tummy after. These might be perfect!
I don’t have the espresso so I am going to try them without it and with the oatmeal in my cupboard. Hopefully that won’t ruin it too much:) Thanks!!!!
You can also use regular coffee or no coffee. Let me know if you like them!
Yum. I wonder if the espresso would get to my kids’ heads. Lol!
Ha ha you can use reg coffee or less coffee or no coffee. Good luck!
Yup. Will be making these this summer.
Thanks! Enjoy 🙂
Yummy! Those muffins look so good I can almost smell them 🙂
I wish you could smell them!
Ok, stop right there…you totally had me at blueberry and almonds! These look heavenly 😉
So glad you are into them! Enjoy 🙂
These look perfect. I love the texture….or at least how I think it is. Soft and crunchy. Yumm.
I hope you give them a try! thanks
Add these to my must make list.
Thanks Jill hope you enjoy!
The perfect yummy breakfast muffin!
Thanks I think you would like them
You’ve pretty combined three of my favorite things–oatmeal, espresso, and blueberries! These bites look super yummy–adding vanilla and cinnamon seal the deal. Plus they are GF!
Fantastic! Hope you enjoy
I need to try these- this would make the perfect easy to eat mid morning snack! 🙂
They sure would!
I’m such a fan of your recipes, friend! I have 2 packs of blueberries that I have hidden away in the fridge (I can never keep blueberries – they eat them in one day) because I wanted to make some muffins.
This. Is. It.
Done.
Making it and will let you know xoxo
Aw thanks I hope you all enjoy them
