Easy Whole Wheat Orzo Greek Salad

This quick & easy vegetarian salad is a great side dish on a hot day or an easily packable lunch. Make it on a Sunday and have it for lunch all week.

Easy Whole Wheat Orzo Greek Salad

Serves: 8
Quick, easy, healthy Vegetarian Orzo Greek Salad
Ingredients
  • 8 oz package of Whole Wheat Orzo
  • 12-16 oz of Campari or sweet tomatoes
  • 2 cups chopped red, green, yellow or orange peppers
  • 1 Cup chopped cucumber
  • 4 oz Feta cheese
  • 1 can Garbonzo beans, drained and rinsed
  • Chopped Romaine for a base layer
  • 1 lemon
  • 1/4 cup Olive Oil (if you have a lemon flavored olive oil it adds a lot of taste)
  • 1/4 cup apple cider vinegar
  • pepper, kosher salt and oregano to taste
Instructions
  1. Cook Orzo according to package. Drain and rinse with cool water and allow to cool.
  2. Add in veggies, Feta, beans, Oil, vinegar, seasonings
  3. squeeze lemon on top
  4. Serve atop chopped Romaine
  5. Enjoy as a side dish or healthy lunch!

    Orzo was def my favorite back when I could eat pasta! The texture always made me so happy, LOL! Oh and the bow-ties were also amazing! 😀

      It’s really good if you can’t find it you can use regular orzo. Perfect for a hot day

    That sounds delicious! Orzo is a new-ish discovery for me. I LOVE it. I never thought to put it on a salad! (Usually I have it in soup.)
