Happy Labor Day! How did that happen so fast? Thanks for joining Sarah and me for Meatless Monday today. Back to school time can mean crazy, hectic mornings for the first few weeks and I am hoping to plan ahead myself to make mornings run a little smoother. We all know breakfast is the most important meal but it’s not always easy to get breakfast done is it? I offer you today some of my favorite Easy Make Ahead Breakfasts for Back To School.
I am all about a healthy combo of protein and carbs for breakfasts to keep me and my kids going strong until lunch time. Here are a few of my favorites.

Make ahead Vegetarian Frittata
One of my go to recipes for sure. So easy to use up which ever veggies you happen to have on hand. I’ve used veggie crumbles in this on to bump up the protein even more. Make it in advance in under 30 m and slice it up into individual portions to pull out in the morning. Find the recipe here
Vegetarian Breakfast Lasagna
Layered with sliced potatoes, eggs, cheese and veggies this breakfast lasagna is sure to please those with a heartier appetite. Again so easy to make ahead and store in individual servings.
Blueberry Banana Oatmeal Bake
One of my all time favorites! This is the recipe that got me to love oatmeal seriously drizzle a little maple syrup on and you are golden. Sure to be a kid favorite!
Sweet Potato Breakfast Skillet
This one takes slightly more time to prep but boy is it worth it. Your veggies and eggs are nestled into a delicious bed of sweet potatoes. Hearty and healthy!
Those are my most favorite make ahead breakfasts for back to school mornings. Now I am seriously hungry! I wrote a few days ago how I plan to get back on track this month with meal planning and prep. For me, having a healthy, delicious breakfast ready to go in the morning is key.
