Hi all! Happy March! Sorry if I’ve been a little MIA this past week, but if you didn’t see my numerous FB and IG posts, I was off on a little Caribbean getaway with the hubs. I tried to stay offline a little and just enjoy the warmth. I will be talking more about my trip in the Ultimate Coffee Date Link up this Saturday. After a week of eating (a lot) of my trip, I am looking forward to getting back on my clean eating program. For the last month, I’ve been participating in the Lorna Jane Fitness Challenge. I will be talking about it more on Wednesday but I’ve been trying out lots of the recipes form her Nourish cookbook and loving them. Today I am sharing, my version of the Curried Red Lentil Soup. I’ve added my own touches to the original. It’s hearty and protein packed and perfect for the ridiculous cold weather. It’s a super easy, one pot dish your whole family will love. Curried Red Lentil Soup-Meatless Mondays
Recipe Type: Soup, vegetarian, vegan, GF, Meatless Monday

Prep time: 10 mins
Cook time: 1 hour
Total time: 1 hour 10 mins
A hearty, vegetarian soup
Ingredients
  • 1 C dried red lentils
  • 32 oz organic vegetable stock
  • 1 onion diced
  • 2 garlic cloves
  • 1 c baby carrots diced
  • 1 C red or yellow pepper-diced
  • 2 celery stalks
  • 2 large vine ripe tomatoes-diced
  • 1/2 c fresh parsley chopped
  • 1 C chopepd kale or spinach
  • juice of 1/2 lemon
  • 2 Tbl spicy curry powder
  • salt & pepper to taste
  • 1/2 tsp smoked paprika
Instructions
  1. Add all ingredients (except kale) to stock pot
  2. Bring to a boil then reduce to a simmer, cover and cook for at least 1 hr
  3. Add Kale about 30 min before serving
  4. Serve & enjoy!

    Sounds tasty. I have only ever had coconut curried flavored foods. Gotta love soup recipes during this cold and long winter. Jealous you were on a carribbean cruise.

    Good choice! I am missing my curried foods quite a lot right now, but I have not had any ideas for recipes. I forgot lentils are such a good carrier for curry! Thanks for the idea! Glad you had such a great time!

    This looks really tasty. I am mentally inventorying my pantry as I read this because I’m home with the sniffles and a sore throat and this soup looks amazing. I think I’m a little light on the veggies but I probably have anough to do a modified version. Thanks for sharing!

    I was just reading about how lentils are the best beans you could eat nutrition wise, went to shop rite yesterday to buy some, but they were out ='( I’ll have to bookmark this recipe!

    This looks really good! I’m all about the curry lately. Just within the past year I finally broke out of my shell and tried Indian Food. I was amazed at how much I liked it! I’m not sure why I was so afraid to try it all these years. Now I CAN NOT get enough curry. I love it. Thanks for sharing this recipe.
