Hi all! Happy March! Sorry if I’ve been a little MIA this past week, but if you didn’t see my numerous FB and IG posts, I was off on a little Caribbean getaway with the hubs. I tried to stay offline a little and just enjoy the warmth. I will be talking more about my trip in the Ultimate Coffee Date Link up this Saturday. By the way, if you’ve never participated it’s a blast you can find the details above.
After a week of eating (a lot) of my trip, I am looking forward to getting back on my clean eating program. For the last month, I’ve been participating in the Lorna Jane Fitness Challenge. I will be talking about it more on Wednesday but I’ve been trying out lots of the recipes form her Nourish cookbook and loving them. Today I am sharing, my version of the Curried Red Lentil Soup. I’ve added my own touches to the original. It’s hearty and protein packed and perfect for the ridiculous cold weather. It’s a super easy, one pot dish your whole family will love. So please join Tina Muir and I to celebrate all the wonderful goodness of Meatless Monday. In case you haven’t noticed, we’ve been crushing it the last few weeks so keep those link ups coming. We visit all of your blogs!

Good choice! I am missing my curried foods quite a lot right now, but I have not had any ideas for recipes. I forgot lentils are such a good carrier for curry! Thanks for the idea! Glad you had such a great time!

They are a great combo! The trip was fab but the weather I came back to was not.
This looks really tasty. I am mentally inventorying my pantry as I read this because I’m home with the sniffles and a sore throat and this soup looks amazing. I think I’m a little light on the veggies but I probably have anough to do a modified version. Thanks for sharing!
I think it would be the perfect antidote! Hope you feel better 🙂
Yum! Looks warm and delicious. I wonder if the curry powder I have is spicy enough??
Just keep pouring it in! LOL YOu can also add a splash of siracha for fun. Enjoy!

This soup looks absolutely amazing! Nothing beats a warm bowl of soup during the winter and I love that this one has lentils and curry – two of my favorites!
Thanks! 2 of my favorites as well. Hope you like it!
Seriously, you should create your own Meatless cookbook, with all the Monday posts alone you do, you could have a pretty great one!
I’m flattered thanks friend!
That looks delicious as always. I wonder how filling it is though.
I find it really filling. You will have to check it out and let me know 🙂

This looks really good! I’m all about the curry lately. Just within the past year I finally broke out of my shell and tried Indian Food. I was amazed at how much I liked it! I’m not sure why I was so afraid to try it all these years. Now I CAN NOT get enough curry. I love it. Thanks for sharing this recipe.
I love curry too the spicier the better!
