Thanks for joining Sarah and me for Meatless Monday today. While I was completely obsessed with “all the soups” the last few weeks, my heart has me dreaming of slightly warmer temps. Lately, I have been craving wraps and sandwiches for lunches. This Curried Chick Pea, Green Apple & Cashew Salad Sandwich hits all the marks flavor and nutrition wise.
Curried Chick Pea, Green Apple & Cashew Salad Sandwich
Chick peas (I use Goya brand) are one of my favorite sources of vegetarian protein. They are high in fiber and believed to aid in insulin regulation and contain both folate and selenium. Now that I’ve convinced you how good they are for you, let me tell you how yummy this Curried Chick Pea, Green Apple & Cashew salad is.
This is the simplest lunch recipe around. The Curried Chick Pea, Green Apple & Cashew salad can be added to a regular green salad as a filling protein, wrapped up in a wrap or served in a traditional sandwich. Literally takes about 5 minutes to make. Instead of mayo, I’ve used some tahini whisked with fresh lemon juice and water. Blend in some curry powder, turmeric, salt & pepper and you’ve got one tasty salad.
I mixed in some crunchy cashews to give a nice texture combination and another boost of protein and healthy fats. Sliced green apples gave another tangy taste pop. I love adding some sharp cheddar slices as well but you can keep it vegan by leaving them off. This Curried Chick Pea, Green Apple & Cashew Salad can be made in advance and kept for all week in the fridge for a combo of salads and sandwiches. I also enjoyed dipping carrots in it for an afternoon snack instead of hummus.
Curried Chick Pea, Green Apple & Cashew Salad Sandwich
Curried chick pea, green apple and cashew come together for this vegan lunch. Easy and healthy
Ingredients
- For tahini dressing:
- 1/3 C of Tahini
- juice of one lemon
- 1/4 C warm water
- 1-2 Tbl curry powder (depending on taste)
- 1 Tsp Turmeric
- salt & pepper to taste
- Recipe:
- 15 oz can chick peas-rinsed and drained
- 1 green apple sliced
- 1/2 C cashews
- optional:
- sliced Cheddar cheese -leave off for vegan
- bread or tortilla
Instructions
- Whisk together all dressing ingredients in a small bowl
- Smash chick peas in bowl or in food processor leaving some texture
- slowly blend in tahini dressing
- add in cashews
- Assemble sandwich or wrap with sliced apples and cheese if desired
