Thanks for joining Sarah and I for Meatless Monday today! I don’t know how the weather is by you but it’s just been crazy hot and humid here in the DC area the past two weeks. These are the kind of days that I do not want to be in my kitchen cooking for sure however, I still want to eat something healthy and yummy. Dilemma solved with this Cucumber Soba Noodle Salad.
I’ve mentioned before how I love to cook meals that I can enjoy for a few days. This Cucumber Soba Noodle Salad does the trick. It’s so easy to make and then enjoy for lunch the next few days or as a side to a dinner.
I have a mix of soba noodles and spiralized cucumbers that blend so well together. You do have a spiralizer right? (Affiliate link) If not, no worries, you could also julienne them but you would not have the noodle like appearance to blend in with the soba noodles. Adding edamame and a light dressing of sesame oil and rice vinegar creates just the right amount of flavor and protein.

Love soba noodles! And cucumber and sesame are perfect for a hot day. I think we just eat more chips and guacamole when it is hot out! At least, we are this summer!

These look so tasty! I’ve been eating a lot of zuchini noodles lately because it’s been so hot. I haven’t tried making cucumber noodles before so that will be the next on my list. 🙂

This certainly looks like the perfect summer time meal. Although, I have not tried buckwheat soba noodles but they look so tasty in your pictures.

I am so excited you posted this…my cucumber plants in my gardne EXPLODED this weekend…and I’ve never tried soba noodles so this is a perfect way to use them and try a new ingredient!

hmmmm…..I’m not much of a cuke eater,but I’m trying to open my mind 😉 I see so many recipes for cucumbers with plain vinegar…I bet the rice vinegar is much lighter ? This looks appealing, and the sesame seeds probably give it a bit of crunch. I just might have to give this a try 😉

OMG YUM. Our cucumber crop from the garden has been exploding! We’ve been using most of it to make pickles, but I should totally keep a cuke or two for myself & spiralize them! I love that this would taste good cool too & up my veggie content!
