Happy Meatless Monday! In keeping with my soup theme all month, I am bringing you another great Winter soup to keep you warm and satisfied. Please join Tina Muir and I as we link up all the best Meatless Monday recipes around.
This “Creamy” soup is actually dairy free & Gluten free. The creamy texture comes from the pureed chick peas. They also bump up the protein and vitamins. So grab a bowl and dig in! It’s a great way to hide the Chick Peas from those picky eaters too.
- 4 C Vegetable broth
- 2 Cans of 14 oz Chick peas (rinsed)
- 28 oz can of diced tomatoes
- 1 small onion diced
- 1 tbl garlic paste or 2 garlic cloves crushed
- 1 1/2 tbl lemon juice
- 2 jalapeno peppers (adjust to taste)
- fresh basil & parsley to garnish
- salt, pepper & garlic to taste
- optional sprinkle of parm cheese to serve
- Add all ingredients into a stock pot
- Bring to a boil and then reduce to simmer for 30 min
- Use an immersion blender or traditional blender to puree soup until smooth
- Garnish with basil & parsley
- Optional sprinkle of Parm cheese
This soup can also be frozen into individual serving sizes and pulled out on one of those chilly soup kind of days. I’ve been craving lots of soups this month.
What are you craving these days??
Ohhh that sounds so good right now. For me, tomato soup is great comfort food, especially when its cold outside, reminds me of home! Love the addition of chickpeas to bulk it up! Great idea!
thanks! It was really yummy and my kids didn’t even notice the chick peas. Happy Meatless Monday
I’m not a huge tomato soup fan but you had me with the chick peas 🙂 I am going to make this next time I need a warm cup of soup!
It’s not overly tomato-y because of the chick peas. Maybe you will give it a try
You make the most fantastic looking meatless recipes! Definitely giving this a try- pinning for later! 🙂
Thanks! Hope you like it 🙂
I haven’t made tomato soup in years. This sounds so good!

Yum! I’m a huge fan of tomato soup and adding the chick peas is a great idea!
Thanks! It really gave it a creamy taste that was amazing.
Oh, I think I could get this one past my husband! Checking the pantry for chickpeas ….
I think you can trick him into it! 🙂
Tomato soup has always been my favorite and this looks like a great variation! Love all the soups, makes dinner nice & easy!
It does! Thanks for stopping by! Have a great day
I love chick peas. I’ll eat them right out of the can, no extra seasoning needed. I’m definitely trying this recipe. Thanks!
I love them too! Hope you like the soup 🙂
Due to all this terrible cold weather I am craving soups! This sounds like yummy comfort food!
Thanks! I have been craving them too. Hope you enjoy
Lovely. That does sound very good.
Thanks!
Mmmm this looks awesome! I need to get on the meatless Monday train!
Yes join us! It’s fun
This looks delicious! We probably eat tomato soup and grilled cheese at least once a week in the winter! So, how does this taste being dairy free? I do like chick peas, but do they change the overall taste too much? I would love to try this, especially with it being so much healthier!
I didn’t miss the dairy at all. I really liked it hope you give it a try. Let me know what you think
I love when you can trick your tastebuds into thinking they’re eating something indulgent/creamy but it’s actually made with veggies or beans. Love it!
You won’t miss the dairy at all. It was really satisfying. Enjoy
This looks delicious! Can’t believe I never thought to blend chickpeas into a tomato soup, nice!
It was really good!
This may be one way to get my family to eat chickpeas!
They will never know!! Mine didn’t 🙂
I am going to have to try this! I love that it’s creamy but not from dairy!
It was really good hope you like it!
I never really use chic peas for anything but hummus I’ll have to branch out this soup sounds yummy!
I love hummus too and chick peas are really versatile. Hope you check it out 🙂
That looks so good! It would have been perfect with the grilled cheese I had for lunch today! I have been craving some risotto, I think that will be one of my future “Meatless Monday” recipes!
ooh yea that would have gone nicely together! We’d love to see your risotto here 🙂
This is perfect for these chilly days. Love creamy soups. They are so much more filling.
Thanks! It was great and no dairy all the creaminess comes from the beans
Yum! You had me at gluten-free. 🙂 I need to add more soups and stews to my meal plan.
They are great! Hope you enjoy 🙂
I had to laugh when I saw this recipe–I had a nearly identical recipe scheduled! Great minds think alike. 🙂 Will definitely try your version!
ha too funny great minds do think alike. Headed over to look at yours now.
Looks good as always!
Thanks friend!
We eat a ton of soup. I don’t like tomato soup, but my husband loves it, so I may have to try this one.
I hope you do! Your kids won’t even notice the beans hiding in there!
Yum! My sister made something very similar to this once for a family “soup” dinner we had. It was delicious!!!
Thanks! I loved the addition of the chick peas
I keep hearing such good things about chickpeas. This is a great addition to soup!
They are a great way to up the protein check it out
This is right up my alley! I love tomato soup 🙂
Me too! I loved switching it up a bit too
Sounds delicious and easy to make too!
Very easy!
Good call on the chickpeas. Thickens it up and adds a protein punch!
Exactly! Hope you give it a try
Yum! Perfect for a winter day and bonus, 2 of my favorite ingredients 🙂
thanks! It was really yummy!
I LOVE chickpeas and I love tomato soup! I never would have thought to put the two together!
They are great together!
I’ve never thought about adding chickpeas to a soup to get that creamy feel without the actual cream. I’ve done that with potatoes but chickpeas seem like an even better option 🙂
You will love it!
I love that this soup is dairy free because I love tomato soup. My favorite is tomato basil soup. Pinning the recipe.
Thanks! Hope you enjoy 🙂
I love suing beans to make soup creamy. And it adds the protein, which you know I love. This looks great!
Thanks so much! Glad you like it
I FRIGGIN LOVE CHICK PEAS!!!! Roasted and salted and rolling around in my mouth until… I CRUNCH! ha ha ha ha aha ha haa ha ha! I would throw some roasted ones in this smooth deliciousness! 🙂
Good idea! They are so good aren’t they?!
Thanks for the recipe! I can’t wait to try it and see how the chickpeas alter the flavor of traditional tomato soup.
Thanks for stopping by! I didn’t think you could really taste the chick peas at all. They do give it a thicker creamier taste. Hope you enjoy
