Chipotle Black Bean Burgers-Meatless Monday

Happy Meatless Monday! Thanks for joining Tina and I for another week of great veggie eats. It’s finally starting to feel like spring around here and I have been itching to get our grill fired up. Well, truth be told, my hubs doesn’t let me near “his grill” but he cook my veggies on it. I whipped up these fab spicy, Chipotle Black Bean burgers on a whim and they were fabulous. My pictures this week really don’t do them justice so you will have to trust me . 🙂

These Black Bean Burgers were really easy to whip up at the last minute with ingredients I already had on hand. I served them with homemade sweet potato fries and salsa. I love making my own salsa and usually have it in the fridge because it’s so good on everything.

Chipotle Black Bean Burgers-Meatless Monday
Recipe Type: lunch or dinner
Author: Confessions of A Mother Runner
Prep time: 10 mins
Cook time: 10 mins
Total time: 20 mins
Serves: 6
A spicy vegetarian alternative for the grill. Vegetarian, gluten free, healthy & easy
Ingredients
  • 2 15 oz cans of black beans-rinsed and drained
  • handful fresh cilantro
  • 1 red or yellow bell pepper-quartered
  • 1/2 onion
  • 2-4 Chipotle in Adobo sauce w 2-4 tsp of sauce (depending on spice pref)
  • 1 egg
  • 1/2 C Gluten Free Panko bread crumbs
  • pepper, garlic to taste
Instructions
  1. In a food processor combine:
  2. onion, cilantro, peppers and chipotle and pulse
  3. Add in beans & egg
  4. Transfer to a bowl and fold in panko
  5. Use a 1/2 c measure to scoop and form into 6 “burgers”
  6. Grill or pan saute about 5 min on each side

 Super simple! The first day I ate the Black Bean Burger on a bun in the traditional burger way. For lunch the next day, it was great in a wrap or on top of a salad. The grilled avocado was the kicker-yum! Hope you enjoy!

Bonus recipe! Make your own Salsa

salsa|easy|5 minute

Simple Home made salsa-Meatless Monday
Recipe Type: condiment

Prep time: 5 mins
Total time: 5 mins
easy 5 minute salsa
Ingredients
  • handful of cilantro
  • 1-2 jalapeno peppers-seeded and halved
  • 1 15 oz can of diced tomatoes
  • 1 C of fresh tomatoes of your choice ( I prefer Campari or small sweet ones)
  • 1 garlic clove
  • salt, pepper to taste
Instructions
  1. Place all ingredients in a food processor and pulse
  2. Add salt and pepper to taste

    Yummy! This sounds delicious!! We did eat off the grill twice already, including yesterday! I LOVE it! This sounds like the perfect grill food 😀

    Yummmmm my grill is so not open yet it snowed here all day yesterday. I need spring ASAP! Those burgers and grilled avocados are making me craze summer. I love a good black bean burger.

    We had a few people on our apartments grill patio this weekend and I was jealous of them, but also not jealous because I don’t think that the grills were cleaned yet…

    we are lucky that we can grill year round here! You are correct black bean burgers never take a good picture but they are yummy! Happy Monday!

    Yum! I love burgers with a Southwest flair. I had one on vacay (in the airport of all places). Our grill is not yet open. I asked the Caveman about that last night as our salmon would’ve been awesome on the grill. Hopefully soon!

    I got a grill as a Christmas present two years ago and I have yet to use it. I can only do so on my fire escape (city living!)

    This sounds so yummy! I am not a vegetarian, but I do not eat hamburgers. I have had black bean burgers before but never on a grill. I bet that takes away from the rubbery texture they tend to have. I have never had grilled avocado. That sound delicious. I have to start firing up the grill now that spring is here.

      Ok once you grill avocado you will never go back! I love to make guacamole with it or put it on top of eggs. Yummy

    YUM! These are so good, I actually had one not to long ago. It was even meatless with a black bean burger too. At first I didn’t think I would enjoy it the same as a regular one, but it was fabulous!!

    Black bean burgers are my fav! I actually prefer veggie burgers to beef/chicken ones even though I eat meat. They’re so flavourful 😀
