Cauliflower “Fried Rice”

Happy Monday everyone! Hope you are all surviving this freezing crazy weather we’ve been having lately. As you are reading this, my husband and I are off on a much needed island hopping adventure in the Caribbean. Stay tuned for pics of our adventures next week. We all love Chinese food but probably don’t love the high sodium and fat content that often accompanies it. I love the idea of using veggies to replace starches and this Cauliflower Fried Rice does not disappoint. Cauliflower is a great substitute for rice in this stir fry and really helps to make it a satisfying veggie meal. I’ve made this twice this past week once with tofu and once without. Depending on how much protein you are craving, I think it’s great either way. The left overs are fabulous for lunch the next day as well.

Cauliflower Fried Rice|vegetarian|meatless Monday|Paleo|GF

Cauliflower “Fried Rice”
Recipe Type: Lunch or Dinner
Cuisine: Asian

Prep time: 15 mins
Cook time: 15 mins
Total time: 30 mins
Serves: 2-4
A lighter twist on a classic Asian dish
Ingredients
  • 1 head of cauliflower-washed & cut into large chunks
  • 1 tsp ginger
  • 1 garlic clove crushed
  • 1/2 onion diced
  • 1 C snow peas
  • 1 cup mushrooms of your choice
  • 2 broccoli crowns
  • 1 red or yellow pepper
  • 1 C brussels sprouts or bok choy
  • 2 eggs scrambled
  • 1 package of firm tofu (drained & diced-optional)
  • 2 tsp soy sauce (or gf sub)
  • 2 tsp Asian chili sauce
  • 2 tbl Teriyaki sauce
  • Splash of sesame oil
  • 1/2 C cashews (or peanut or almonds) crushed
Instructions
  1. Prep veggie by washing and cutting into bite size pieces
  2. Add Cauliflower to food processor and pulse until cauliflower has a rice consistency-set aside
  3. In a hot skillet-saute onion, garlic & ginger with sesame oil
  4. Add in all other veggies (except cauliflower)
  5. May need to add a splash of water to steam veggies
  6. Add soy sauce, chili sauce, Teriyaki and season to taste
  7. Add Cauliflower “rice” and cook 2-3 minutes (do not overcook)
  8. Meanwhile- scramble 2 eggs and add to veggie mixture
  9. Top with nuts and serve

    Have fun on your holiday Deborah! That sounds like so much fun, I am jealous. And the cauliflower fried rice looks delicious! I have tried cauliflower rice before and made a Morrocan style raw salad…I can’t remember what I put in it now (cauli, spices, parsley, lemon juice, raisins…I think that’s it??) but it was amazing. I should really make it again 🙂

    Yum! I have only made cauliflower rice once, but I should do it again. I love the idea of making it like a chinese dish! I love fried rice, so this would be a great alternative. Thanks for the great recipe, hopefully we have another good day today 🙂

    Have fun on vacation! I am going to Florida on Wednesday and can’t wait 🙂 I have been wanting to make cauliflower pizza crust for awhile now. I just am not sure if I love cauliflower. Can’t tell you the last time I have tried it.

      I made the Cauliflower crust pizza too it doesn’t taste like real pizza but good none the less!

    What a smart idea! I have only seen people use cauliflower to make fake mashed potatoes but I have never seen it used lie rice! That is one super healthy recipe! Have fun on the vacation! I hope it is warm where you are going!

    I’ve had a cauliflower rice recipe on my counter for a while now that I haven’t gotten around to trying yet!! I love making pizza crust with cauliflower!

    Ohh, enjoy your vacation. It’s a grey, grey day in DC so you’re not missing anything. This looks really delicious and I like the idea of using cauliflower rice! I need to try making that, and this is a good recipe to test it out on.

    Love this!! I am all over cauliflower and have to try it like this, never thought to make a fried rice with it! Genius!
    We do a un fried fried quinoa and we bake our homemade egg rolls (both in a post on the blog). We really like making Chinese food at home so we know what’s in it, isn’t greasy, and it still tastes as good or better! The only bad thing is it takes us awhile making everything from scratch as we do egg rolls, “fried” rice, “cream cheese” wantons, and usually something else but so worth it. Oh except the smell that seems to linger for a couple days. 😉 I also have a few Pad Thai recipes up using sweet potatoes or other things oh and a Spring Roll Salad that’s one of my favs!

    I’ve never made cauliflower “rice”, but have done cauliflower fritters! I totally agree with you that sometimes we want Chinese food, but without all the sodium/grease/etc. Thanks for sharing, and hope you’re having a great time on the trip!

    I have seen people make all kinds of crazy things with cauliflower! Pizza crust to a version of mashed potatoes, this seems to be a pretty versatile vegetable! This recipe look delicious btw!

    Deborah you are making meatless Monday turn into meatless Tuesday and Wednesday with this yummy post. All I want is fried cauliflower rice now. Oh and cashews because yum! Love the recipe it’s exactly what I’ve been craving!

    I do not like mashed cauliflower but the rice cauliflower sounds like it would be a similar consistency to actual rice and much healthier.
