Blueberry Banana Strawberry Oatmeal Bake

For Meatless Monday the week of Valentine’s Day, I wanted to offer you all a heart healthy recipe. I’ve been all over breakfast lately with my sweet potato salsa egg muffins last week and this delicious Blueberry Banana Strawberry Oatmeal Bake. I’ve been taking the time to really up my breakfast game and noticed that I feel way better during my morning workouts when I’ve filled up with a substantial meal. This is another dish that you can make ahead and enjoy for a few days.

I’ve been trying to make myself enjoy oatmeal more. I realized that what I did not like was the consistency so I was searching for a way to prepare it with a firmer consistency. Baking the oatmeal into a warm, satisfying dish filled with blueberry, banana and strawberry is perfect.

I prepared this blueberry banana oatmeal bake with no added sugar at all. I like to enjoy it with a little reduced sugar  maple syrup on the side. That way, you can control the amount if any that you’d like. Using gluten free oatmeal makes this naturally enjoyable by vegetarians and gluten free folks. I am sure that your whole family will love this though!

Placing the bananas on the bottom underneath the oatmeal, allow them to cook fully and become caramelized creating an amazing texture and taste. I am using regular old fashioned oats here not the quick cook type. The whole recipe has 2 cups of oats and 2 eggs so that each serving has about a 1/2 cup of oats and about a half of an egg. Hope you enjoy as much as I did!

Blueberry Banana Oatmeal Bake

Ingredients

  • 2 C old fashioned oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp salt
  • 2 C almond milk unsweetened
  • 2 large eggs
  • 1 tbl vanilla
  • 1 large banana-sliced
  • 1 cup strawberries-sliced
  • 3/4 c blueberries

Instructions

  1. Spray a casserole dish with cooking spray
  2. Preheat oven to 375
  3. In a small bowl mix: oats, baking powder, cinnamon, nutmeg & salt
  4. Layer bananas into casserole dish
  5. Pour oat mixture on top to cover
  6. Whisk eggs, milk and vanilla and pour over top
  7. Sprinkle on strawberries and blueberries evenly
  8. Bake 20-25 min until firm

    Oh we must have oatmeal on the brains this week – I also did oatmeal but mine are the cold, overnight kind. Love oats either way – but your way looks perfect for winter!

    I pretty much love oatmeal, even plain, and this sound really yummy! My mom used to make a baked oatmeal. Baking it must make it more firm.

      It does make it more firm. I don’t like the consistency of oatmeal the traditional way and this is so yummy and easy to make ahead and cut into portions for the week.

    I am the exact same way. I don’t like the consistency of oatmeal so I make a baked oatmeal too! I thought I was the only one lol. Yours looks delicious with all the fresh fruit!!

    I eat oatmeal every morning – I microwave frozen berries and quick oatmeal with water and then top with almond butter. So good!

    Yours looks great, but I’m avoiding eggs and dairy for the moment. Hopefully I can try it when I add eggs back in…

      Eggs are one of my biggest sources of protein. I like that when I bake this the oatmeal takes on a diff consistency. Oatmeal is great runner fuel isn’t it?

    This looks delicious and so comforting! I whipped up some berry baked oatmeal yesterday to enjoy after our very cold morning run. Not sure what happened but it was a fail, well not a fail but took so much longer than usual to bake so I’m not sure what I was doing as I was rushing to get it in the oven. It was still delicious and satisfied my craving for bread pudding but I didn’t get to come right in and enjoy it like I had hoped.

    Looks fantastic! I am trying to incorporate berries into my diet as much as possible, and this would be a perfect way to do so. Oatmeal is the best!

    This sounds delicious! I love the combo of strawberries and blueberries in smoothies so I bet they’d taste great together in an oatmeal bake too.

    One question – I know you said old fashioned oats. Are you referring to old fashioned rolled oats or steel cut oats? Just want to make a note of it so that I make it right when I add this to my breakfast list!

      I am using the Quaker Old Fashioned Oats here I believe they are rolled oats but it does not specify. The strawberry blueberry combo is delish

    This is such a great idea! I really struggle in the mornings, but I’m a night owl.     Yum! I’m the same way about oatmeal, I can’t do the texture. I use old fashioned oats and let them sit in hot water for about 3 minutes and it gives me a texture I can tolerate!
