Black Bean Vegetarian Chili-3 Ways Meatless Monday

Welcome to February! It’s been so cold around here lately that I just want to make all of my favorite comfort foods. How about you? I love a great Vegetarian Chili and this week I’m showing you how I got creative with the leftovers and ate it all week long.

Cooking note: I’ve use Beyond Meat Veggie crumbles for this recipe as they are my favorite brand of “fake meat”. Feel free to sub as you desire.

Black Bean Vegetarian Chili-3 Ways Meatless Monday
Recipe Type: Chili, dinner, vegetarian, vegan

Prep time: 15 mins
Cook time: 6 hours
Total time: 6 hours 15 mins
Serves: 8
An easy, fast vegetarian chili
Ingredients
  • 2 cans of black beans
  • 32 oz can of diced tomatoes
  • 32 oz tomato puree
  • 1 package Beyond Meat veggie crumbles (or your favorite brand)
  • 8 oz package of baby bella mushrooms diced
  • 1 C carrots diced
  • 1 red and 1 yellow pepper diced
  • 1 yellow onion diced
  • 2-4 Chipotles in Adobe sauce (add more sauce for extra spiciness)
  • 1-2 tsp of chili powder, cumin, pepper, garlic
  • 1 tsp unsweetened cocoa powder
  • salt & pepper to taste
Instructions
  1. Combine all ingredients into a crock pot and cook on low for 6 hours or high for 3 hours
  2. Alternate: Add all ingredients to a stock pot, bring to a boil, reduce heat and simmer for at least 1 hour

How to serve? The first night I ate the Vegetarian chili on top of quinoa, garnished with avocado and cheese as pictured above. The second night I served it on a baked sweet potato.

    Oh yum, I love chilli! I have never thought to serve it on a baked sweet potato, that sounds awesome – going to try that next time I make chilli!

    It should almost be a law that you top chili with cheese! It just takes the dish to a whole new level of gooey deliciousness !

    You got it a lot of use out of that chili- love it! I do love cheese and toppings on my chili! I have used mine as a baked potato topper but I haven’t tried the sweet potato- very smart! Happy Monday!

    Love cheese on top of me chili! I am a traditionalist and usually just eat chili in a bowl 🙂 I love the addition of mushrooms in your recipe.

    I love love love chili, but I can’t do the beans. This might be the time I have to insist on the meat! Or, you know what? I should create a TVP chili… himmmmmmmmm

      They have them at whole foods I really like them the best. The texture is great.

    I actually love meatless chili. I make it with 3 types of beans including black beans, chickpeas and red kidney beans and it is so delicious and filling – you don’t even miss the meat! Seriously. You make me want to break it out and hook it up for this week’s worth of lunches. Thanks for the inspiration Deborah!

    I haven’t tried Beyond Meat – I’ll have to look for it! My favorite way to eat chili is with a sprinkle of cheese. YUM!

    I love spicy vegetarian chili on top of sweet potatoes!! When I make chili I often make a large (jumbo) pot and we will enjoy it a few nights different ways. On top of sweet potatoes, chili cheese fries, salads, with rice, and even draining it to put in omelets or a hash.

    I definitely love chili! I actually think I may make it tonight. I usually make ours with ground turkey, but I love how you added mushrooms and carrots to up the veggies and make it more filling–a trick I will be using!

    This is the perfect time of year for chili! I wish I had made chili for the Superbowl but I survived somehow with copious amounts of buffalo chicken dip 😉 I eat more black beans than anyone I know — aren’t they wonderful? So versatile and healthy.

    Yum – as soon as I saw chili, I knew I was going to like this post 🙂 I could eat chili every day, for pretty much every meal – even breakfast, if used as an omelet topping! This is the first time I’ve seen chili used on a salad though – great idea!

    YUM!!! I’ve never tried avocado on top… but I should! I love to add a sprinkle of cheddar cheese and some plain greek yogurt on my chili! Nothing beats chili and corn bread on a chilly day! 🙂

    Vegetarian chili is one dish that you really do not miss the meat if it’s done right. Before my dairy issues, I would load it up with cheddar cheese and sour cream ( a must! ). I love it as a topper for sweet potatoes. Every person who sees me eat it this way puts their nose in the air. I have to explain it’s the spicy and sweet that is an excellent combo. Some are willing to try it and are convinced… others not so much. That just means more for me!

    Black bean chili is my absolute favorite! I’ll have to try adding chipotle in adobe in mine next time. I bet that makes it real spicy!

    I actually just had black bean chili just the other day, I am taking those Diet-to-Go meals, and it was pretty good. But this on a potato, that would just hit the spot. Thanks for sharing!

    I keep hearing about Beyond Meat! I had a sample once and enjoyed it. I need to get a full serving, though! Also – chili in a baked potato – perfection!

    This recipe looks delicious! I always make chili the same way, and often forget that there are countless combinations of ingredients that can be put together to make chili. We have an annual chili cookoff at school, and its always fun to see how many different types of chili are brought to the table.

    I made a big pot of chili yesterday – with ground beef and ground turkey though. I don’t like using meat substitutes — I’d rather try a recipe with just beans and other veggies.

    I love chili! As a vegetarian, I’ve always used beans and not meatless crumbles. For some reason I always assumed they would fall apart (they don’t always have the best consistency.) I will have to try this next time!
