Thanks for joining me and Sarah for Meatless Monday today! Now that the weather is warming up, I am ready to give up my soups for lunch and start thinking about some new alternatives. Tuna Salad sandwiches have long been a classic lunch go to but for vegetarians and vegans not an option. I’ve come up with a better than tuna vegan white bean salad wrap that I hope you will love as much as I do.
I had seen a few similar salads using chick peas to sub out the tuna but after my recent hummus fascination, I was ready for something new. White beans are loaded with protein and fiber, naturally fat free and low in calories. The perfect vegetarian protein!
Better Than Tuna: Vegan White Bean Salad Wraps
I wanted to make the Vegan White Bean salad look as similar to tuna as possible so I added in fresh dill, mustard, vegan mayo and little tumeric for color. I also added in some chopped pickles and shredded carrots for some texture. Honestly, I loved this salad and ate it 3 days in a row.
I had all the ingredients but the fresh dill already in my fridge and this whole lunch can be made for under $2. Win!
This Better Than Tuna White Bean Salad is so easy to prepare and a great take to work lunch that you can enjoy in a wrap, sandwich or on crackers. Bonus no tuna smell either!
Better than tuna vegan white bean salad
A plant based version of a classic tuna salad sandwich. Healthy protein and easy for a weekday lunch
Ingredients
- For the white bean salad:
- 1 15 oz can of white beans (rinsed and drained)
- heaping TBL of deli mustard
- 1 TBL of vegan mayo
- 1/2 tsp of tumeric
- pepper to taste
- 1/2 dill pickle chopped into small pieces
- handful of fresh dill-chopped
- 1/2 C shredded carrots
- Condiments:
- Wrap or bread of choice
- sliced tomato
- Sprouts
- sliced avocado
- lettuce
Instructions
- In a mixing bowl add white beans
- smash with a fork leaving some pieces
- add remaining ingredients and chill for 30 min
- Assemble into wrap or sandwich
- top with desired condiments
I literally made this in 5 minutes however I think the white bean salad is better chilled. It was very filling and satisfying with so much flavor and all of the yummy condiments. Also makes a great high protein post workout snack. Hope you enjoy! I know I will be lunching on this salad all summer long.

What a great idea!! I can’t wait to try this. I’m making a grocery list right now since I was gone last week and usually do the shopping at the end of the week.
