Wow I can’t believe 2014 is coming to and end already. I’ve had so much fun with the Meatless Monday posts this year and I wanted to share some of my favorites with you in case you missed them. Since linking up with Tina Muir a few months ago, we’ve both loved how popular the Meatless Monday posts have become. These are my top 5 Favorite Meatless Mondays from this year. Hope you enjoy them as well.
“Squiche” with sun dried tomatoes and spinach–
My take on a healthier quiche using spaghetti squash as the crust. This is one of my favorite creations of the year. It’s perfect for lunch or dinner. It’s low carb, low fat, vegetarian, gluten free and can be vegan. Meatless Monday at it’s best!
Mezze Trio of Dips
3 of my most favorite healthy vegetarian dips-Baba Ghanoush, Spicy Black Bean & Roasted Red Pepper. Perfect for Holidays, Football games and everyday healthy snacking. Grab those carrot sticks and dig in! Trust me you will love them.
Tempeh Edamame Rice Noodle Salad
I’ve been exploring more with Tempeh and loving the health benefits of this power house veggie protein. Have you tried it yet? This salad can be served warm or cold and makes a great lunch or dinner. With the rice noodles it’s gluten free as well. Enjoy!
The Best Chocolate Protein Muffins
We all need a little chocolate in our lives right? I love to make these and freeze them so I always have a healthy pre workout snack ready to go. Pair it with a little Greek Yogurt and I am good to go.
Brussels Sprouts with Pecans, Cranberries and Gorgonzola
I was determined to give Brussels Sprouts another try and learn to like to them-success! This was an amazing recipe which I will be making all year around. I appreciate all of the great feedback from lots of you on this one.

We’ve loved having so many of you join us for Meatless Monday and 2015 is going to be even bigger and better. In January, we are going with soups, stews and chili but feel free to link up any of your favorite Meatless meals. Look forward to seeing all of your great recipes.

I totally love brussels sprouts. They are divine! The squiche looks awesomely delicious too. Ok either I’m just greedy or hungry right about now – everything looks great.

I”m going for the chocolate protein muffins!–OMG! Can you use regular brown sugar in the place of splenda? 1:1?
You can! I just did it to cut the calories and sugar. You would need to double the amount I believe.

The squiche looks like a great idea! I have been making my quiche recently with a sweet potato crust but my little one isn’t quite impressed. She doesn’t really dig sweet potatoes so I must give this a try! Thanks for the idea.
