Thanks for joining Sarah and me for Meatless Monday today. A friend of mine recently asked me if I had any good gluten free ginger snap cookie recipes. When I looked around at recipes on Pinterest, every one them was just loaded with sugar. I like my sweets for sure, but I am also really trying to watch added sugars. I’ve found that I can easily modify lots of recipes by slashing the sugar without losing the flavor. I came up with my own version of cookies to bake for her that I am excited to share with you today. I added Medjool dates to the cookies and cut all the sugar and you know what, they came out spectacular. I know you are going to love these Ginger Snap Cookies as much as I did.
The Best Ginger Snap Cookies
Why use dates as my sweetener? As I mentioned, I have been working on cutting added sugars of all kinds from my cooking. Medjool Dates are a naturally sweetened fruit so It’s easy to add them to just about any recipe. Any baked goods that normally call for raisins or bananas could be subbed out with Medjool dates. Oh and did I mention that dates have tons of potassium and fiber? That makes them a wonderful post exercise snack and a great way to refuel.
Cooks notes: I like to bake my cookies on Sarah This helps to keep the cookies from sticking to the pan without the use of oils. Then simply allow them to cool on a wire cooling rack. (affiliate link).

Aren’t dates just the best for a sweetener?! I use them in a lot of better-for-you dessert options. Like you said, it’s a great way of adding whole fruit to sweeten rather than added sugar.
