It’s finally starting to feel like spring around here this past week! I am so excited for all of the great fruits and veggies to come out. I am all about the green today with an easy, healthy Asparagus Avocado Soup. This soup is well “super” easy! There is no cream at all however the avocado adds a savory, creamy texture that you will love. It’s the perfect spring Meatless Monday meal! Sarah and I are glad to have you join us for the link up today.

This weekend was our soup club swap night again. I wanted to make something a little lighter and springlike. When I saw how amazing the asparagus looked, I knew it was the winner. Not only does this soup only have basically 5 ingredients, it can also be enjoyed hot or cold. I know! Crazy good huh?

Cooking tips:

I like to roast the asparagus for 15 minutes instead of steaming it but either will work. I think roasting brings out more flavor and keeps the crispiness. It is important to use ripe avocados so that they blend up smoothly. If you prefer a thicker soup, use one extra avocado.

I tried using an immersion blender at first and did not feel that it worked so effectively so I switched to my ninja blender. (Best blender ever!) Using the blender whips up the soup into a creamy, smooth consistency.

Extra bonus: This asparagus avocado soup is vegetarian, vegan, gluten free, and paleo friendly. Whew-Everyone wins!

Asparagus Avocado Soup

Print this recipe

Ingredients

  • 1 lb of fresh asparagus
  • 1 ripe avocado
  • 2 garlic cloves-minced
  • 1/2 onion-chopped
  • 32 ounces of vegetable broth
  • season with salt, pepper, garlic powder
  • 1 tsp cumin & paprika
  • handful of fresh cilantro
  • optional topping: pumpkin seeds

Instructions

  1. Preheat oven to 375
  2. clean asparagus and roast on baking sheet with olive oil, salt & pepper
  3. roast for 15 minutes
  4. In a large stockpot add onion and garlic and saute for 5 min
  5. Add in veg broth
  6. Add in roasted asparagus and avocado
  7. Add in cumin, paprika, garlic powder, cilantro, salt and pepper
  8. bring to boil and simmer for 10 minutes
  9. transfer to blender and puree until smooth and creamy
  10. Serve hot or cold
  11. top with pumpkin seeds

When my friends came over for soup club swap last night, we had a few asparagus avocado soup shots! I would certainly do this again for a summer party.

    This soup is genius! I love pureed soups but never would have thought of pairing these two veggies together!! I bet the avocado makes it extra creamy. 🙂

    I have had asparagus soup before and didn’t like it bc it was cold.But I also didn’t have it w avocado in it either, so will have to try it w that mixed in and eat it hot.

    Looks delicious! I’ve tried asparagus soup before, but I’ve never made it with avocado. It sounds like a great alternative to the cream that’s usually called for.

    You had me at asparagus and avocado! This looks delicious. Asparagus is one of my favorite spring veggies! It’s so fresh and delicious when you get it straight from the farmers’ market. I love to chop it up and put it in egg scrambles or pasta. Thanks for a great new way to use it! Pinned and will definitely be making this spring! 🙂

    Great recipe! It looks so easy that even I can make it! Often I read recipes that are so complex that my eyes totally glaze over but not this one! Plus, I LOVE asparagus!
