When I received my June Foodie Pen Pal this month from Michelle, at Bombsquad Fitness , I was surprised and excited to receive a boxful of Asian goodies from her trip to Chinatown. So I was inspired to make this Tempeh Edamame Rice Noodle Salad (scroll down for recipe) and it was so good. If you haven’t tried Tempeh yet it is a nutritional powerhouse. Check it out here.
One serving of Tempeh has:
- 18 grams of Protein .
- Zero sugar
- 1 gram of saturated fat
- low sodium
- 5. High potassium
- low calorie (140 c)
- Great source of iron
Coupled with the edamame in this salad and you’ve got a high protein, healthy vegetarian meal.
- 1 package of rice noodles
- 1/4 c sesame oil
- 1/2 c rice vinegar
- splash of Ponzu sauce (can sub with soy sauce)
- 1 tsp of chopped garlic
- 1/2 tsp fresh minced ginger
- squirt of Siracha
- 1 package of tempeh (cubed)
- 1c shelled edamame
- 1/2 c red & yellow peppers cut into strips
- garnish with unsalted cashews
- Cook rice noodles according to package-rinse w cold water and drain
- While noodles are cooking, saute tempeh in a splash of olive oil until browned about 5 min. set aside.
- combine sesame oil, vinegar, ponzu, garlic, ginger, siracha set aside.
- In a large bowl add noodles, tempeh, edamame & peppers
- pour on dressing and combine
- sprinkle on cashews right before serving-Enjoy!
Note**If you use a Gluten free Ponzu or soy sauce, this is a gluten free recipe-bonus!

I just used Tofu for the first time last night, and I really enjoyed it! Tempeh is on my list to use next, and that stir fry looks just right for it! I am looking forward to trying it now. Perfect post run fuel too! Thanks for sharing, and reminding me that I need to try! Have a wonderful week 🙂

I haven’t tried tempeh yet, but have been wanting to for quite a while. I’ve been seeing it at an Asian food store nearish to my home, and had no idea what to make with it. I’ll be pinning this for the next time I go there 🙂

They sell it at most regular groceries now as well. It’s really easy to use and can sub for any protein.

I have never tried Tempeh!! Kinda scared. There us only one place in town that has it and its kind of a dirty little convience store! Gonna check again to see if the littleh health food store can get some in. On maybe a road trip out of town!

The regular big grocery chains carry it now look next to the tofu. Also whole foods or Trader Joes may have it. You can use it as you would tofu. I have a store like the one you described near me too that I wouldn’t go in either-LOL

It’s similar to tofu but a little more flavorful. You can sub it in where you would use tofu or chicken in a stir fry or a salad. Very high in protein and super healthy. Let me know if you try it.

It is similar to tofu but more flavorful and a little firmer. Give it a try and let me know if you like it.

I don’t know what I’m doing wrong with tempeh. I’ve enjoyed it when I’ve had it at restaurants but it never turns out right when I try to make it at home. There’s some weird bitterness that isn’t in the restaurant tempeh. Is there some trick to it I’m missing?

Well I did saute it first with a little salt and pepper. I find it really soaks up the flavor of the other spices and oils and that takes away the bitterness. You might just have to come over for dinner 🙂

Have you tried Tempeh? NO. What do you make with it? Probably not, because I suffer from hypothyroidism and I have to watch my soy intake. The recipe above would be a double whammy because of the the edamame. I would make it but I would use chicken or shrimp instead of Tempeh and I would use half of the edamame. It looks good though especially since I haven’t had lunch today LOL.

Ah didn’t realize that some people had to avoid soy. You could certainly make it with chicken or shrimp or both. I’m going to have it for dinner again tonight.

yes but the texture is a little different. It is denser.
