This quick & easy vegetarian salad is a great side dish on a hot day or an easily packable lunch. Make it on a Sunday and have it for lunch all week.
- 8 oz package of Whole Wheat Orzo
- 12-16 oz of Campari or sweet tomatoes
- 2 cups chopped red, green, yellow or orange peppers
- 1 Cup chopped cucumber
- 4 oz Feta cheese
- 1 can Garbonzo beans, drained and rinsed
- Chopped Romaine for a base layer
- 1 lemon
- 1/4 cup Olive Oil (if you have a lemon flavored olive oil it adds a lot of taste)
- 1/4 cup apple cider vinegar
- pepper, kosher salt and oregano to taste
- Cook Orzo according to package. Drain and rinse with cool water and allow to cool.
- Add in veggies, Feta, beans, Oil, vinegar, seasonings
- squeeze lemon on top
- Serve atop chopped Romaine
- Enjoy as a side dish or healthy lunch!
