It has been a while since I’ve shared a healthyish baked treat! I will tell you a little baking secret. In my opinion, you can easily cut the sugar in most recipes by half and not even miss it. Yes, really trust me. I’ve been baking this Banana Blueberry Muffin Loaf for my kids (now adults) for many years. Over time, I have cut the sugar way down and no one even noticed. They still love it and request it. I hope your family does too!
Lower Sugar Banana Blueberry Muffin Loaf
As I mentioned, I’ve cut the sugar in this recipe down to 1/4 cup for the whole loaf. The health benefits of reducing sugar are many. The sweetness from the bananas and the blueberries does the trick. Cinnamon and vanilla are a must of course. If you do want a little more mini chocolate chips are optional. But really, are they?
What are the ingredients?
I like to keep a few frozen bananas in the freezer at all times for those last-minute baking needs. I use them for this Banana Blueberry Muffin Loaf as well as my favorite baked oatmeal. The riper the bananas the better.
The main ingredients are :
-bananas and blueberries
-eggs and sour cream
-Pantry staples: flour, baking powder, baking soda, salt, cinnamon, vanilla
Cook’s notes
I have tried using Greek Yogurt instead of Sour Cream and it does not work as well. the sour cream is essential and keeps the banana blueberry muffin loaf moist. Yes, moist. It is a word that you want to describe baked goods.
Variations
This recipe can easily be made into muffins by simply adjusting the cooking time. I suggest using nonstick silicone muffin pans. You could easily add some walnuts to this recipe.

- 3 ripe bananas-mashed

bake for approx 60 min or until middle is set
