Happy Friday! I am excited for this week’s Friday Five post with Cynthia, Mar & Courtney it’s all about Veggies!
As you all know, I am a vegetarian so veggies are a big part of my life. Perhaps I am not the only one who gets in a veggie rut and tends to buy and eat the same veggies week after week? I’ve been consciously attempting to try new veggies and expand my diet a little.
Here’s what I am planning on eating lots of this spring:
1. Micro Greens– How did I not even know these existed until last week?! Yep I’ve been back to Whole Foods 3 times to buy more. I’m loving them in salads and wraps and I can be sure you will be seeing some Meatless Monday recipes with these in them very soon.
2. Collard Leaves- Also new to me! I’ve had collard greens before but never ate them whole and raw before this week. Stay tuned for fun Meatless Monday recipe with these next week.
3. Radishes- I have been seeing these everywhere and they just scream spring to me. I was never a fan of them in the past and I am determined to whip them into something yummy.
4. Strawberries- So technically a fruit but I am putting them in! I eat these all year around but they taste way sweeter and better in the spring and summer. They also cost a lot less this time of year. I could eat them by the bowlful everyday.
5. Grilled Veggies- It is rare that we grill in the winter and I can’t wait until we start firing up the grill in the next few weeks. My hubs is really territorial about “his” grill but sometimes he will do this for me. Yum! My favorite way to eat them. I did a whole post last summer on how to grill them and then make them into meals all week long.
Ok now I am hungry! What veggies are you looking forward this Spring?

I’m obsessed with spring fruits and veggies right now! Collard leaves have become my go to for wraps.

Haha, I’m with you on radishes! Not a fan and I admire your determination to make something good out of them! I will stay tuned for that. My husband usually grows them in the garden and eats them raw.
ooh I don’t know if I could just eat them plain. There has to be something to do with them-stay tuned!
Haven’t heard of micro greens before, but will give them a try. I am really excited for the new fruits and vegetables that will be available now. I love getting them in season. Radishes are a good one that are often forgotten! I just bought some mangos yesterday, which made me SO excited! Have a wonderful weekend!

I love it when the farmers market opens and we can get so many fresh things. I can’t wait to pick strawberries soon. They tast so good freshly picked!
Yes me too! I plan to go there more often this year to get some inspiration.
ZUCCHINI and peas and sweet corn! And just about anything that is local. Fruit wise–alllllll the stone fruits!
Those are some of my faves too. Grilled Zucchini is the best 🙂
I love pretty much any and all veggies. Even radishes lol! I wish my family would jump on board, because some of my favorites they don’t like! What a bummer 😉 And the challenge is going to be AWESOME!

I’ve been eating 2 types of kale and red chard from the garden the past few weeks! I love my greens! I cannot wait for our challenge to start on April 1st! #RockYourCore WOO HOO

I’ve been all about big curly kale bunches, grapes and big fresh carrots. I’ve always made my collards “southern style” but am looking to branch out with them!

I don’t eat veggies but I try to get seasonal fruits to try to avoid a fruit rut, but I do have fruit staples as well.
I think we all get in a rut. No veggies??
I LOVE the taste of grilled veggies! When we were finally able to purchase our own grill last summer (since our apartment didn’t allow them), I quickly started grilling vegetables multiple times a week. They’re so delicious!
They are my summer staple
It’s probably later in the year, but grilled asparagus, zucchini and squash. YUMMY.

Microgreens are amaaaazing! So delicious and easy to throw on sandwiches or into salads w/ a little olive oil, salt and pepper. I love this whole list in general…need to get some collards into my life, soon.

I think I’m going on week 3 of “When can we pull the grill out I really want grilled veggies, like now!”! I think I could just eat plates of grilled veggies every night in the summer! To bad we aren’t neighbors! 😉

Strawberries are 3 containers for $5 here- so every day is a strawberry day! I have never met a collard green that I liked so I can’t wait to see what you do with them! My spring garden is planted so I am just a waiting……..and waiting……… 🙂 Happy Friday friend and I guess I will let you talk me into some core challenge I am sure it is good for me!

I love all the fresh fruits and veggies that become available in spring! Those microgreens are good. I once had some sea asparagus at a restaurant but haven’t seen it anywhere since. Have you tried that?

Right now I am craving salads made up of kale, swiss chard and baby spinach. Throw some strawberries and tuna or crab on there with some poppy seed dresing.. mmmmm mmmmm!

Yum! I used to buy radishes all the time to slice into salads. I need to do that again.

Grilled/roasted veggies are my fav in spring/summer. I’ve never heard of micro veggies either nor have I tried radishes before, so thanks for the suggestions!
I always thought I didn’t like radishes so I am determined to find a way to love them!

I am so excited for spring veggies, although in NH they are more like summer veggies. We are still under lots of snow! I love microgreens and greens of any kind for that matter.

Radishes are so good. I don’t do anything with them, but eat them raw, by themselves or in salads. No need for anything else, in my book. I love the bite to them.

I’m not a vegetarian but I do the same thing, always eating the same veggies day in and day out. I’ve been loving roasting vegetables lately though.

My favorite spring veggie is asparagus. You can grill it, or I often roast it with peppers. So good. Haven’t tried collards yet. Looking forward to your recipe.

Totally agree! Even though I’m a “vegetarian”, I tend to eat the same veggies over and over again! I need to eat more radishes- I like them and I NEVER eat them!

I’m pretty sure we live off of grilled veggies in the Spring/Summer. There is something about them that makes my heart (and taste buds sing!). I’m also excited to get my radishes growing! So easy to do, fast, and best of all, I’m the only one who likes them so they’re aaaaallll miiiiiiiine!!!!
I need to figure out what to do with radishes. So if you have any ideas send them my way!
