5 Minute Kale Pomegranate Parmesean Salad

Super Easy, High vitamin, great tasting salad. Make it today and bring it to lunch tomorrow!

It literally takes 5 minutes to make this! Here’s what you need:

5 Minute Kale Pomegranate Parmesean Salad
Recipe Type: Salad
Author: Confessions of A Mother Runner
Prep time: 5 mins
Total time: 5 mins
Serves: 2-4
5 min kale salad
Ingredients
  • -bag of pre cut, pre washed Kale of your choice chopped
  • -2 oz Parmesean Cheese
  • -1 package of ready to eat Pomegranate seeds (approx 1/2 cup)
  • -3 Tbsp Olive Oil
  • -6 Tbsp Champagne vinegar (or sub in a fruit flavored vinegar)
  • -1 Tbsp Agave syrup or honey
  • pepper & kosher salt to taste
Instructions
  1. -Chop Kale into bite size pieces and put into a large plastic container with a top
  2. -whisk together olive oil, vinegar, agave, salt and pepper
  3. -pour dressing over kale and place top on and shake to coat
  4. -refrigerate for at least 2 hrs to allow kale to soften
  5. (it won’t look like you have enough dressing but you do!)
  6. -when ready to eat sprinkle each salad with parmesean and pomegranate seeds and serve

      They do have it at TJ’s , Whole Foods and a lot of regular grocery stores. I wouldn’t make it if I had to pluck out the seeds myself! It’s a tasty combo let me know if you try it.

    This is such an interesting combination of things! I haven’t ever really had kale before, but the pomegranate makes this sound really good!

      It’s really good and the dressing softens the kale up a little and gives it a nice texture.

    I like pom idea as a salad addition. Christmas in July! This salad reminds me of the Holidays! Would fit right in at Thanksgiving or Christmas. Love the vinagrette simple dressing, must try it! Great Post Autumn

    Sautéed kale with red onions in olive oil is my absolutely FAVORITE way to eat kale. I did find some kale salad at the grocery store and it looked pretty good with orange vinaigrette (sp?) so I bought it. YUM! #wowlinkup

      I find the dressing really softens up the kale and makes it really tasty if you leave it for a few hours. Hope you try it!

    This looks so good! Can’t wait to try it! Haven’t used pomegranate myself – will be fun to add another ingredient to the kitchen. I always love it when eating out.

    I’ve never come across ready pomegranate seeds. But then again, I wasn’t really looking. I’m going to have to keep my eyes open for these! #wowlinkup

      You should be able to find them at Trader Joes or Whole foods you might have to ask. Hope you give it a try!

    this is the best combo EVER! I remember the first time I added dried cranberries to a salad and was obsessed then I added POM seeds and became a salad junkie, who needs croutons when you have a burst of flavor! xo C (#wowlinkup)

    From the picture at first glance the pomegranate seeds look like strawberries. I will try this because I like the idea of the kale marinating in the dressing. Pinning your recipe. #wowlinkup

      Glad you like it! Putting the dressing on and allowing it to marinate for a few hours softens up the kale and makes it really tasty. Enjoy!
