5 Minute Edamame Crunch Salad
Tired of your go to protein for lunch? Edamame is a vegan, high quality protein derived from soybeans that is easily added into any salad. Edamame is filled with potassium, magnesium and and iron. It has 17 grams of protein per cup. (Source)
What are the ingredients?
edamame
shredded carrots
Napa and purple cabbage -chopped
sesame seeds and chopped peanuts (optional but delicious)
For the dressing:
sesame oil
rice vinegar
chopped garlic and ginger
chili paste
Let’s make it
When I said 5 minutes, it really only takes 5 minutes to whip up this delicious lunch. Simply, combine the cabbage, carrots, and edamame in a large bowl. Whisk together the dressing ingredients and drizzle on top. Sprinkle on some sesame seeds and chopped peanuts for texture and crunch.
That’s it! You’ve got a super easy and very healthy lunch.
Some other toppings ideas
This Edamame Crunch Salad is delicious just the way it is. If you’d like to make it a heartier meal, top with cooked shrimp, chicken or any other protein. Very versatile to suit all types of diets. It is vegan, dairy free and gluten free.

Ingredients
- 2 cups edamame
- 2 C chopped Napa cabbage
- 2 C shredded purple cabbage
- 1 C shredded carrots
- Dressing:
- 1/2 C sesame oil
- 1/3 C rice vinegar (or apple cider vinegar)
Tbl chopped garlic & ginger
- 1-2 Tbl chili paste
- Toppings
- Sesame seeds
- Chopped peanuts
Instructions
- in large mixing bowl combine veggies
- Whisk together dressing ingredients
- Pour over salad
- Top w sesame seeds and crushed peanuts
