No one wants to spend any more time in the hot kitchen this time of year. Today, I have a super easy and crazy healthy 5 minute Cucumber Pineapple Gazpacho soup to share.
5 Minute Cucumber Pineapple Gazpacho Soup
I had some girl friends over for a lunch date last week and they could not get enough of this Cucumber Pineapple Gazpacho Soup. Seriously, they almost ate it all before I even had the chance to photo it. Ha ha.
So what makes it so good? First of all, it literally takes 5 minutes to make. All the ingredients go right into a blender and after a minute, it’s ready to enjoy. Secondly, it’s full of fresh healthy ingredients. Cucumber, pineapple, jalapeño and yellow tomato that’s it!
It’s cool, refreshing and practically calorie free. It’s a must make for lunch this week. Also a great post workout hydrating snack. Cucumbers and pineapples are chock full of water and vitamins to rehydrate you.
Customize this soup by adding more or less jalapeño peppers depending on how spicy you like your food. The sweetness of the pineapple pairs so well with the spiciness of the jalapeños. Hope you and your friends enjoy as much as my friends and I did.
5 minute Cucumber Pineapple Gazpacho Soup
5 minute 5 ingredient Cucumber pineapple gazpacho. Refreshing and delicious vegan option
Ingredients
- 3 large cucumbers quartered
- 2 Cups of fresh pineapple with juice
- 1 large yellow tomato
- 1-2 jalapeno peppers
- splash of Apple cider vinegar
- salt and pepper to taste
Instructions
- Place all ingredients in a blender and pulse until desired thickness
- chill 30 min and serve

Honestly, I don’t think I’ve ever had gazpacho LOL (I know, big surprise). I can assure you my mother never made this. It does sound good with the pineapple, though. Maybe I’ll venture over to the “gazpacho” side and give this a try. I do have cukes in my garden 😉
