Thanks for joining Sarah and me for Meatless Monday today. I am all about staying cool in this summer heat and looking for new ways to do it. No one wants to spend any more time in the hot kitchen this time of year. Today, I have a super easy and crazy healthy 5 minute Cucumber Pineapple Gazpacho soup to share.
5 Minute Cucumber Pineapple Gazpacho Soup
I had some girl friends over for a lunch date last week and they could not get enough of this Cucumber Pineapple Gazpacho Soup. Seriously, they almost ate it all before I even had the chance to photo it. Ha ha.
So what makes it so good? First of all, it literally takes 5 minutes to make. All the ingredients go right into a blender and after a minute, it’s ready to enjoy. Secondly, it’s full of fresh healthy ingredients. Cucumber, pineapple, jalapeño and yellow tomato that’s it!
It’s cool, refreshing and practically calorie free. It’s a must make for lunch this week. Also a great post workout hydrating snack. Cucumbers and pineapples are chock full of water and vitamins to rehydrate you.
Customize this soup by adding more or less jalapeño peppers depending on how spicy you like your food. The sweetness of the pineapple pairs so well with the spiciness of the jalapeños. Hope you and your friends enjoy as much as my friends and I did.

So perfect for summer and so delicious! I would have never thought to pair yellow tomato with pineapple and cucumber but it sounds so refreshing.
The flavors really blend well together and that little hint of heat from the jalapeno is delish
I LOVE gazpacho but would have never thought to make it with pineapple. I’ll definitely have to give your version a try.
Super refreshing and a nice change from the traditional version.
I haven’t gotten on the gazpacho train yet but this looks delicious!

Gazpacho is one of my favorite soups esp in the summer. Never thought of putting pineapple in it. Thanks for sharing.
It’s a really fun twist hope you try it out
We have cucumbers and peppers in the garden all I need is the pineapple! This sounds like a quick and easy refreshing lunch perfect for this week. I wonder if I could get Sammie to eat this as she has soccer camp at the highschool and it would be refreshing after.
Happy Meatless Monday!
Super refreshing and lighter than a traditional gazpacho. Hope you all enjoy it
This sounds interesting. I love pineapple and I love cucumber, but not sure how I feel about them together. I’ll just need to start being your taste tester.
I would love that! anytime
The presentation is so pretty!

This sounds so perfect! I really don’t want to cook or even eat hot food these days. And I love cucumber?
Fabulous! Hope you enjoy it
It’s supposed to be over 100 degrees the next couple days where I live so anything that you don’t have to cook is fine by me!
Fabulous hope you give it a try
Oooh I can just taste the sweet and spicy together – perfect for a hot summer day!
Thanks! I agree
Honestly, I don’t think I’ve ever had gazpacho LOL (I know, big surprise). I can assure you my mother never made this. It does sound good with the pineapple, though. Maybe I’ll venture over to the “gazpacho” side and give this a try. I do have cukes in my garden 😉
It’s so good in the summer heat and so refreshing. C’mon you know you want to 🙂

How cool and refreshing! I have never really gone much for the chilled soups, but this would be great for a summer grill night
Yes it sure would!
I don’t care for gazpacho at all (which is weird, because I love all the things in it), but I recently had a watermelon gazpacho that was amazing–so I want to try this!

the last time I had gazpacho was actually in Spain years ago! I wonder if I could find yellow tomato here… I’m going to have a look!
This time of the year they are available but you can always sneak in a red one if you can’t find one
Oh wow, that looks so refreshing! I used to make gazpacho but never tried a cucumber option. Yum!
It’s a nice change that is super refreshing
