Thanks for joining Sarah and me for Meatless Monday today. Who else is excited about March Madness? Although it seems like most people have already busted out of their brackets, it sure is fun to watch and share in the excitement of the games. Of course every major sports event requires fabulous snacks to enjoy while watching the game. Today, I am sharing an easy and oh so delicious 5 Layer Mediterranean Rice Dip you and your guests will dive right into. This post is sponsored by Mambo Sprouts and Mahatma Rice. Recipes are my own.

5 Layer Mediterranean Rice Dip

This is the easiest party dip to make at the last minute. I took all of my favorite Mediterranean foods and piled them all together to create this “can’t get enough” 5 Layer Mediterranean Rice Dip. The base of this delectable creation is made with Mahatma organic rice. It’s a perfect make ahead bed to layer on all the healthy goodness you need.

5 Layer Mediterranean Dip

So which of my favorite foods have I combined into the 5 layer Mediterranean Rice Dip? A bed of Mahatma Organic Rice is topped with Tabouleh salad, Hummus, Feta Cheese and tomatoes. Yum huh? Your guests will grab the pita chips and dig right in. It’s seriously addictive.

What makes this 5 Layer Mediterranean Rice Dip so easy? Since this dip is served at room temperature, simply prepare a serving of Mahatma Organic Rice in advance. When ready to serve to your guests, pile on the Tabouleh salad, hummus of your choice, Feta cheese and tomatoes. Serve with pita chips or veggies. So simple yet so delicious!

    That looks great! Wow the brackets are whacky this year. Our underdog Loyola is still hanging in there. Clearly anything is possible.

    I never would have thought to use rice for a dip – this is really cool! I’m not a huge fan of college basketball, but I’m a huge fan on anyone that has a party where I can eat 🙂

    This is brilliant! I love all those Mediterranean flavors but I never can think of anything to do with them outside of wraps and pitas. A dip is super creative and a nice change of pace from regular dips.

    what a simple and yummy idea! I love anything with feta cheese and while I never would have thought to include rice in a dip, I would be more than willing to dive into this!

    I couldn’t eat this because of the cheese, but my husband would totally devour this! It looks amazing! Great recipe to have on hand for any get together!
