Thanks for joining Sarah and me for Meatless Monday today. I am all about staying cool in this summer heat and looking for new ways to do it. No one wants to spend any more time in the hot kitchen this time of year. Today, I have a super easy and crazy healthy 5 minute Cucumber Pineapple Gazpacho soup to share.
5 Minute Cucumber Pineapple Gazpacho Soup
I had some girl friends over for a lunch date last week and they could not get enough of this Cucumber Pineapple Gazpacho Soup. Seriously, they almost ate it all before I even had the chance to photo it. Ha ha.
So what makes this cold Cucumber Pineapple Gazpacho Soup so good? First of all, it literally takes 5 minutes to make. All the ingredients go right into a blender and after a minute, it’s ready to enjoy. Secondly, it’s full of fresh healthy ingredients. Cucumber, pineapple, jalapeno and yellow tomato that’s it!
It’s cool, refreshing and practically calorie free. This Cucumber Pineapple Gazpacho Soup is a must make lunch this week. Also a great post workout hydrating snack. Cucumbers and pineapples are chock full of water and vitamins to rehydrate you.
Customize the cucumber pineapple gazpacho soup by adding more or less jalapeno peppers depending on how spicy you like your food. The sweetness of the pineapple pairs so well with the spiciness of the jalapenos. Hope you and your friends enjoy this Cucumber Pineapple Gazpacho Soup as much as my friends and I did.
