Thanks for joining Sarah and me for Meatless Monday today! Hope all of my mother runners out there had a very happy Mother’s Day this weekend. I am really excited to share my Hummus, Spinach and Feta Baked Egg Rolls with you today. Sort of an east meets west fun combination. I received free samples of Sabra mentioned in this post. By posting this recipe, I am entering a contest sponsored by Sabra and I am eligible to win prizes associated with the contest. I was not compensated for my time.

Hummus, Spinach and Feta Baked Egg Rolls

I’ve been a fan of Sabra hummus for years so when I had the chance to receive some tasty samples in exchange for creating a recipe, I jumped right on that. I had no idea that there were over 15 flavor combinations of hummus! For today’s recipe I am using the Sun dried tomato Sabra hummus.

Of course hummus is great eaten traditionally as a dip. However, ever since I made a grilled cheese with hummus a few years back, I’ve been a fan of the warm hummus and cheese combo. Inspired by a blend of some of my favorite cuisines, I came up with these Hummus, Spinach and Feta Baked Egg Rolls.

Not only are they ridiculously easy to make, they are ridiculously yummy as a lunch or side dish. They would even make a great party munchie. The blend of the Sun dried tomato Hummus, spinach and feta is a warm, pocket of goodness. Since these Hummus, spinach and Feta Baked Egg Rolls are baked right in the oven, they are pretty low calorie and a lot healthier than a traditional egg roll.

How easy are they? Simply spread your Sabra Sun dried tomato hummus right onto the wonton wrappers. Pile on the chopped spinach and feta. Roll them up, bake and enjoy!

Hummus, Spinach and Feta Baked Egg Rolls

Yield: 6

Hummus, Spinach and Feta Baked Egg Rolls

Ingredients

  • 6 Tbls Sabra Sun dried tomato hummus
  • 6 egg roll wrappers
  • 2 cups chopped fresh spinach
  • 1/4 C feta cheese
  • 1/3 C diced tomato
  • Cooking spray

Instructions

  1. Preheat oven to 400
  2. Line a large baking sheet w a silicone sheet
  3. For each egg roll:
  4. Spread about 1 Tablespoon of Sabra Sun Dried Tomato Hummus onto egg roll
  5. Add a about 1/4 C spinach
  6. Add a sprinkle of feta and fresh tomato
  7. Roll egg roll according to package directions
  8. Use a dab of water to seal the egg roll
  9. Spray with cooking spray
  10. Bake for 10-14 min until crispy
  11. Serve warm

    Hummus is such a great addition to everything and the creaminess is a delicious contrast to a crispy egg roll. I bet the low fat hummus I made today would be great in these.

    Since you mentioned heating up hummus in a sandwich now I’m looking for new ways to eat hummus. These look delicious!! If you like hummus, try out Sabra’s Supremely Spicy hummus – amazing!

      The supremely spicy is one of my go to’s as well. Try the Sabra in grilled cheese or quesadillas so good!

    Such a fun way to use hummus! I never knew they had that many combinations of hummus either. Lately I’m the only one who eats it so I haven’t been buying it much, maybe I’ll have to give a fun new flavor a try.

    Oh, these do look yummy!!!! I have never made egg rolls before (but have eaten plenty of them in restaurants). These sound easy to make and quick to bake. Excellent!!

    This is straight up brilliant! I used to use egg roll wrapper a lot, but I’ve gotten out of the habit. I have to bring this back… with hummus! I’m digging the new flavors. I bet this would be great with the jalapeño too (you know I love the spice)!
