For Meatless Monday the week of Valentine’s Day, I wanted to offer you all a heart healthy recipe. I’ve been all over breakfast lately with my sweet potato salsa egg muffins last week and this delicious Blueberry Banana Strawberry Oatmeal Bake. I’ve been taking the time to really up my breakfast game and noticed that I feel way better during my morning workouts when I’ve filled up with a substantial meal. This is another dish that you can make ahead and enjoy for a few days.
I’ve been trying to make myself enjoy oatmeal more. I realized that what I did not like was the consistency so I was searching for a way to prepare it with a firmer consistency. Baking the oatmeal into a warm, satisfying dish filled with blueberry, banana and strawberry is perfect.
I prepared this blueberry banana oatmeal bake with no added sugar at all. I like to enjoy it with a little reduced sugar maple syrup on the side. That way, you can control the amount if any that you’d like. Using gluten free oatmeal makes this naturally enjoyable by vegetarians and gluten free folks. I am sure that your whole family will love this though!
Placing the bananas on the bottom underneath the oatmeal, allow them to cook fully and become caramelized creating an amazing texture and taste. I am using regular old fashioned oats here not the quick cook type. The whole recipe has 2 cups of oats and 2 eggs so that each serving has about a 1/2 cup of oats and about a half of an egg. Hope you enjoy as much as I did!
- 2 C old fashioned oats
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/4 tsp salt
- 2 C almond milk unsweetened
- 2 large eggs
- 1 tbl vanilla
- 1 large banana-sliced
- 1 cup strawberries-sliced
- 3/4 c blueberries
- Spray a casserole dish with cooking spray
- Preheat oven to 375
- In a small bowl mix: oats, baking powder, cinnamon, nutmeg & salt
- Layer bananas into casserole dish
- Pour oat mixture on top to cover
- Whisk eggs, milk and vanilla and pour over top
- Sprinkle on strawberries and blueberries evenly
- Bake 20-25 min until firm
