Apple Honey Zucchini Bread

It might be labor day but Meatless Monday never takes a day off! I love all the fall pumpkin recipes but I am not ready to embrace them quite yet given that it is still 90 degrees in the DC area. I am excited about apples though! Given that the Jewish holidays are starting next week I thought it was the perfect time to whip up an apple honey zucchini bread to share with you. I really enjoy cooking seasonally and apples and zucchini are perfect right now and pretty inexpensive. In the Jewish tradition, honey signifies a “sweet new year”. With the start of school and the start of a new season, it seems the perfect time to wish you all a sweet new year.

What I really love about this recipe is that it has no added white sugar. I have used a small amount of honey and the sweetness of the apples to provide just the right amount of goodness. I tried making this with other flours and didn’t get the consistency I was looking for so kept this recipe with a white flour. Feel free to experiment with your favorite flour. I think it came out fabulous hope you enjoy! It’s perfect for breakfast or paired with your afternoon coffee.

Apple Honey Zucchini Bread

Apple Honey Zucchini Bread

Ingredients

  • 1 1/2 c grated zucchini
  • 3/4 c grated apples
  • 1/4 c oil
  • 1/2 c honey
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1 1/2 c flour of your choice ( I used white)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 c chopped walnuts

Instructions

  1. Preheat oven to 350
  2. Whisk together honey, oil, eggs & vanilla
  3. Stir in zucchini & apples
  4. Combine remaining dry ingredients in a small bowl and fold them into batter
  5. Spray loaf pan with cooking spray
  6. Bake 55-60 min until golden brown

    Soooo with you on the pumpkin! This sounds like a great fall compromise! I am thinking of apple picking with the kids this fall and this might be a good recipe!

    This looks great! I have a standby chocolate zucchini bread recipe but this looks like a nice way to mix it up and really bring in a taste of fall. And I cannot wait for the giant honeycrisp apples to be back in full force (and not $25/apple) at the store.

    I can just imagine how tasty this is! It’s like a knife in my heart everytime I think about zucchini and the fact that our garden yielded zero this year. That’s just so wrong. But the neighborhood apple trees seem to be thriving, and the deer are eating all the low-hanging ones. Haha!

    I love apples and apple recipes. I’m not a huge pumpkin fan, but I suck it up because my husband and daughter are! I’d rather have apple spice or ginger bread for fall flavors. When we lived back in Northern VA. I was surprised that the schools did not give Jewish Holidays off- I thought everyone celebrated. Growing up in this part California, and with my own kids now, Jewish Holidays are a part of our culture ( even though we aren’t Jewish) I still teach my children the rituals and traditions– like the symbol and meaning behind the apple and dipping it into the sweet honey.

    Great combination here!! I used to use apple sauce all the time in baking, and the zucchini must be a perfect compliment to the apple flavor. It also adds bulk to recipes without extra calories. Win! Thanks for the idea!

    I love zucchini bread! This combo of flavors sounds divine. It always feels like an accomplishment to me to get a recipe to taste good without using sugar. Love that a bit of honey is used in place of it here.

      Most baked goods have both baking soda and powder in them it really gives the best consistency. Hope you give it a go

    I’ve been eating a lot of zucchini lately and this recipe will just continue the trend. Looks amazing!! My favorite fall food is squash – the aforementioned along with butternut, spaghetti and acorn – so excited to see them in the stores soon ๐Ÿ™‚
