Enter these espresso oatmeal blueberry bites that will rock your world. They are filled with good for you yumminess in the form of oatmeal, blueberry and almonds.
I got the inspiration for these from a recipe I saw in last month’s Runner’s World but I think my version is way tastier. 🙂 These are naturally gluten free (using gluten free oatmeal) as they have no flour at all. These espresso oatmeal blueberry bites are not a muffin but more of an oatmeal bake on the go.
I’ve added instant espresso to give you just a little extra spring in your step and then loaded them up with healthy goodness. You will love this combination of blueberry, oatmeal and almonds as a breakfast on the go or a post workout snack. They can be eaten room temperature or warmed.
I opted to make them in this silicone muffin tin but you could also prepare them in ramekins are any individual dishes. (affiliate link)
I wish you could smell how amazing the cinnamon and oatmeal smelled as it filled my kitchen. I use no added white sugar as these amazing snacks are sweetened with honey and apple sauce only which also keeps them moist.
Espresso Oatmeal Blueberry Bites
- 2 eggs
- 1 1/4 C skim milk (or milk of your choice)
- 1 C apple sauce (unsweetened)
- 2 tsp vanilla
- 3 Tbl honey
- 1/2 C slivered almonds
- 3 C steel cut oatmeal
- 1 tsp baking soda
- 2 Tbl instant espresso
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 3/4 C blueberries
- Preheat oven to 350
- spray muffin tin with cooking spray or use silicone muffin pan
- In medium bowl combine:
- eggs, milk, apple sauce, vanilla, honey and whisk
- Mix in:
- oatmeal, baking soda, espresso, cinnamon, salt and almonds
- mix to combine
- evenly distribute mix into muffin tin
- Add 4-8 blueberries into each bite
- Bake for approx 25 min until they have solidified
- Enjoy warm or room temperature
